I had some leftover bulgogi made with Korean beef for gimbap, and instead of letting it go to waste, I decided to use it in a sandwich. It turned out surprisingly delicious, so I wanted to share this recipe with you! Enjoy a rich flavor with simple ingredients.

First, prepare the vegetables for the sandwich. Thinly slice the onion and tomatoes. Lightly drain the pickles. Separate the lettuce leaves, wash them thoroughly in water, and then pat them completely dry. Ensuring excess water is removed will prevent the sandwich from becoming soggy.

If your bulgogi isn’t pre-cooked, prepare the marinade now. In a bowl, mix together 3 Tbsp soy sauce, 2 Tbsp brown sugar, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, 1 Tbsp sesame oil, a pinch of salt, a dash of black pepper, and a pinch of ginger powder. Grate one kiwi and strain its juice through a fine-mesh sieve or cheesecloth, then add only the juice to the marinade. *Important: Adding kiwi pulp can make the sauce cloudy, so use only the strained juice.

Pat the beef (120g) dry with paper towels to remove any excess moisture. Add the prepared bulgogi marinade and mix well to coat the meat evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour. The longer it marinates, the deeper the flavor will be.

Heat a lightly oiled pan over medium-low heat. Cook the marinated bulgogi, stirring occasionally to prevent burning, until it’s tender and cooked through. Once cooked, remove from heat and let it cool slightly.

Crack 4 eggs into a bowl and whisk them thoroughly. Lightly grease a thin omelet pan and heat it over medium-low heat. Pour a thin layer of the whisked egg to create a delicate egg crepe. Once cooked, carefully remove and slice it into desired shapes.

Spread a layer of mustard sauce evenly on one side of each slice of bread that will be used for the sandwich. This adds a wonderful tangy flavor.
