Whip this up after work! When you’re running low on side dishes, say goodbye to meal prep stress with this quick and easy stir-fried shiitake mushroom recipe. The chewy texture and savory flavor are absolutely delightful, making it a perfect side for rice or a lunchbox addition.
Key Ingredients- 8 shiitake mushrooms (choose fresh and plump ones)
- 1/2 small onion (sliced into strips)
- A small bunch of green onion (chopped)
- A little carrot (thinly julienned)
- 1 Tbsp minced garlic (for aromatic depth)
- 1.5 Tbsp soy sauce (for umami)
- 1 Tbsp sesame oil (for nutty aroma)
- 1 Tbsp toasted sesame seeds (for garnish and nutty flavor)
- 2 Tbsp cooking oil (for sautéing)
- A pinch of salt (for final seasoning adjustment)
Cooking Instructions
Step 1
First, trim the tough ends of the 8 shiitake mushrooms, wash them under running water, pat them dry, and slice them into bite-sized strips of similar length. Peel and slice the half small onion into strips. Thinly julienne the carrot and chop the green onion. These vegetables will add flavor and color to the dish.
Step 2
Heat 2 tablespoons of cooking oil in a pan over low heat. Add 1 tablespoon of minced garlic and sauté slowly until fragrant. Be careful not to burn the garlic; cooking it gently will release a wonderful aroma that enhances the dish’s flavor.
Step 3
Once the garlic is fragrant, add the prepared green onion, onion, and carrot to the pan. Stir-fry over medium heat until they are slightly tender but still have a slight crunch. As the vegetables cook, their natural sweetness will emerge, adding depth to the flavor.
Step 4
Now, add the sliced shiitake mushrooms and stir-fry everything together until well combined. The mushrooms will start to soften and release their characteristic earthy aroma.
Step 5
When the mushrooms are cooked to your liking, pour in 1.5 tablespoons of soy sauce. Stir well to coat all the ingredients and continue to cook for another 1-2 minutes until the soy sauce is evenly absorbed.
Step 6
Finally, stir in 1 tablespoon of sesame oil and 1 tablespoon of toasted sesame seeds and toss to combine. It’s best to add sesame oil at the end to preserve its delicate aroma.
Step 7
Taste the dish and, if needed, add a tiny pinch of salt to adjust the seasoning to your preference. Once all the ingredients are beautifully incorporated, your delicious stir-fried shiitake mushrooms are ready! They are exceptionally tasty served over a bowl of warm rice.
