Introducing a delicious duck curry recipe that’s incredibly easy and quick to make, perfect for using up leftover smoked duck and vegetables from your fridge. You don’t need complex seasonings; curry powder alone provides a rich flavor. This dish is ideal for busy days or novice cooks. The savory notes of smoked duck blend beautifully with the sweetness of the vegetables, making it a perfect companion to rice!
Main Ingredients- 200g Smoked Duck
- 3 Potatoes
- 2 Onions
Seasoning- 6 Tbsp Curry Powder

Cooking Instructions
Step 1
First, peel and dice the potatoes and onions into bite-sized pieces. Cut the smoked duck into your preferred size. In a deep pan or pot, sauté the duck over medium heat until slightly browned and some fat has rendered. Then, add the diced potatoes and onions, and stir-fry until the vegetables become translucent and tender. Sautéing the vegetables beforehand enhances their sweetness and flavor.

Step 2
Once the vegetables and duck are sufficiently sautéed, add about 500-600ml of water (it’s best to refer to the water recommendation on your curry powder packaging and adjust accordingly). Bring to a boil over high heat, then reduce to medium-low. Simmer for about 10-15 minutes, or until the potatoes are tender. When the potatoes are almost cooked, dissolve 6 tablespoons of curry powder in a small amount of water or broth to prevent clumping, and then pour it into the pot. Mixing it separately before adding ensures a smooth consistency.

Step 3
After adding the curry powder, reduce the heat to low. Stir occasionally to prevent sticking and cook for another 5-7 minutes, or until the curry reaches your desired thickness and the flavors have melded. Once it’s thick and delicious, it’s ready! Serve generously over hot rice. Leftover curry can be refrigerated and reheated for another tasty meal.
