Ingredients- 600g Pork Leg Meat (leaner cut, great for a lighter taste)
- 3 Tbsp Olive Oil
- 3 Tbsp Cheongju (Korean rice wine) or Mirin (helps remove pork odor)
- 3 Tbsp Lemon Juice (tenderizes the meat and reduces gaminess. Can be omitted if unavailable)
- Pinch of Salt
- Pinch of Black Pepper
- 3-4 Bay Leaves (adds a fragrant aroma)
Cooking Instructions
Step 1
1. First, prepare 600g of pork leg meat. Gently pat it dry with paper towels. Make several shallow cuts across the surface of the meat. These cuts help the seasonings penetrate better and make the meat more tender when cooked.

2. To eliminate any pork odor, pour 3 tablespoons of Cheongju (or Mirin) evenly over the meat. This will effectively neutralize any undesirable smells.

3. Next, drizzle 3 tablespoons of lemon juice over the pork. Lemon juice not only tenderizes the meat but also adds a pleasant brightness to the flavor. If you don’t have lemon juice, you can skip this step.

4. Lightly season the meat with a pinch of salt and black pepper, ensuring it’s spread evenly. You can also use a seasoned salt blend like ‘herb salt’ if you have it. Avoid over-salting; a light touch is best.

5. Finally, scatter 3-4 bay leaves around the meat in the air fryer basket. The aromatic essence of the bay leaves will infuse into the pork, enhancing its overall flavor profile.

6. Place the prepared pork into the air fryer basket. Cook at 180°C (350°F) for 15 minutes. After 15 minutes, carefully flip the pork and cook for an additional 10 minutes. Your delicious air fryer suyuk will be ready! The exterior should be golden brown, and the inside tender and juicy. To check for doneness, insert a skewer or fork; the juices should run clear.
