Easy Air Fryer Baked Whole Potato
The Simplest ‘Accordion Whole Potato Bake’ Recipe You’ll Ever Make!

By slicing potatoes thinly and layering them with colorful vegetables and a generous topping of cheese, you create a visually stunning and deliciously unique dish. Using an air fryer makes the process incredibly simple, perfect for beginners. Enjoy the crispy exterior, fluffy interior, fresh vegetables, and the delightful stretch of melted cheese!
Ingredients- 2 whole potatoes (large ones work best)
- 4 Tbsp olive oil
- Assorted vegetables, thinly sliced (e.g., onion, bell peppers, mushrooms)
- 6 pinches of salt
- 100g mozzarella cheese (or pizza cheese, or Parmesan to taste)
Cooking Instructions
Step 1
First, wash the 2 whole potatoes thoroughly. Using large potatoes will make them easier to handle. To create the accordion effect, place two chopsticks parallel to each other on either side of the potato, then thinly slice the potato into approximately 5mm thick rounds. The chopsticks act as guides, preventing you from slicing all the way through and helping to create the signature accordion shape.
Step 2
Gather any vegetables you have in your refrigerator! Thinly slice your chosen vegetables, such as onions, bell peppers, mushrooms, or zucchini. Thinly sliced vegetables will fit easily between the potato slices and cook to a tender texture.
Step 3
Drizzle about 2 tablespoons of olive oil over each prepared potato. I like to use truffle olive oil for an extra layer of flavor, but regular olive oil is perfectly delicious too. The olive oil will help the potatoes become moist and wonderfully savory.
Step 4
Carefully tuck the thinly sliced vegetables into the gaps between each potato slice. Filling the spaces generously will make the finished dish look beautiful and add a variety of flavors.
Step 5
Don’t discard any olive oil that has dripped down from the potatoes and vegetables!

Use a spoon to scoop up the collected olive oil and drizzle it back over the potatoes and vegetables. This step enhances the flavor even further. Then, sprinkle 3 pinches of salt evenly over each potato to season.

Place the prepared potatoes onto a piece of parchment paper. Using parchment paper will help keep your air fryer clean and prevent the potatoes from burning.
Step 8
Wrap the potatoes completely in the parchment paper, then twist the sides to seal them tightly. This creates a packet that traps moisture, ensuring the potatoes cook up tender and juicy. Place the wrapped potatoes into your air fryer and bake at 180°C (350°F) for about 40 minutes. Cooking time may vary depending on the size of your potatoes and your air fryer model, so check for doneness partway through.
Step 9
Carefully remove the well-baked potatoes from the air fryer, still in their parchment paper, and transfer them to a serving dish. The beautifully cooked accordion shape is sure to whet your appetite!
Step 10
Finally, top the warm baked potatoes with plenty of mozzarella cheese. As the cheese melts, it will beautifully coat the potatoes and vegetables, creating an irresistible combination. You can also add a sprinkle of Parmesan cheese if you like, but I personally prefer the chewy texture of pizza cheese. Enjoy immediately while it’s hot!
