An effortlessly crafted 2-color Injeolmi (Korean rice cake) using “Kong-Guk-mul” (soybean milk) made easily in the microwave. Enjoy the delightful chewiness and rich soybean flavor.
Basic “Kong-Guk-mul” Injeolmi- 8 Tbsp glutinous rice flour
- 10 Tbsp Jungsejung “Kong-Guk-mul” (Thick Soy Milk)
- 1 Tbsp sugar
- 1 Tbsp honey
- 1/4 tsp salt
Black Soybean “Kong-Guk-mul” Injeolmi- 8 Tbsp glutinous rice flour
- 10 Tbsp Jungsejung “Kong-Guk-mul” (Thick Black Soybean Milk)
- 1 Tbsp sugar
- 1 Tbsp honey
- 1/4 tsp salt
Savory Soybean Coating- 2 Tbsp roasted soybean powder
- 2 Tbsp Castella cake crumbs
Other- A little sesame oil
- 8 Tbsp glutinous rice flour
- 10 Tbsp Jungsejung “Kong-Guk-mul” (Thick Black Soybean Milk)
- 1 Tbsp sugar
- 1 Tbsp honey
- 1/4 tsp salt
Savory Soybean Coating- 2 Tbsp roasted soybean powder
- 2 Tbsp Castella cake crumbs
Other- A little sesame oil

Cooking Instructions
Step 1
Prepare all your ingredients. We’re making two distinct colors of Injeolmi today, so we’ll use both regular and black soybean “Kong-Guk-mul.” The glutinous rice flour will be divided accordingly.
Step 2
Take a small microwave-safe bowl and line it completely with plastic wrap. Add 8 tablespoons of glutinous rice flour to the bowl.
Step 3
Pour 10 tablespoons of Jungsejung Thick Black Soybean “Kong-Guk-mul” over the rice flour. Add the measured sugar, honey, and salt. Now, let’s mix everything together.
Step 4
Stir the mixture thoroughly until no dry flour is visible. It’s important to achieve a smooth, uniform consistency.
Step 5
Time for microwaving! ① Cover the top of the bowl with plastic wrap, leaving it slightly loose, and poke about 2 small holes for steam to escape. Microwave on high for 1 minute. ② Carefully remove from the microwave, stir the mixture well, and microwave again for 1 minute. ③ Repeat this process: take it out, stir, and microwave for another minute. ④ After the final 1-minute microwaving session, take it out, stir once more until smooth, and let it cool slightly. This completes the black soybean “Kong-Guk-mul” Injeolmi batter.
Step 6
Now, let’s make the batter for the regular “Kong-Guk-mul” Injeolmi. Line another microwave-safe bowl with plastic wrap and add 8 tablespoons of glutinous rice flour. Pour in 10 tablespoons of Jungsejung Thick Soy Milk, followed by 1 tablespoon of sugar, 1 tablespoon of honey, and 1/4 teaspoon of salt. Mix until the flour is fully incorporated and no dry bits remain.
Step 7
Follow the exact same cooking method as you did for the black soybean Injeolmi. Microwave in 1-minute intervals, stirring well after each interval. After the final stir, allow the batter to cool down sufficiently. Your regular “Kong-Guk-mul” Injeolmi batter is now ready.
Step 8
Prepare a mold for shaping the Injeolmi. Line a separate bowl with plastic wrap and lightly brush the inside with sesame oil. This prevents sticking and adds a subtle aroma.
Step 9
Carefully spoon the prepared black soybean “Kong-Guk-mul” Injeolmi batter into the oiled mold. Press it down firmly to create an even layer and ensure a compact shape.
Step 10
Next, gently add the regular “Kong-Guk-mul” Injeolmi batter on top of the black soybean layer. Press this down firmly as well, aligning the shapes to create a beautiful two-toned effect.
Step 11
Wrap the entire mold securely with the plastic wrap and shape the Injeolmi into a neat block. Let it cool completely at room temperature or in the refrigerator until it firms up nicely. This step is crucial for clean slicing.
Step 12
Once fully cooled and firm, unwrap the 2-color Injeolmi. Cut it in half lengthwise. Place one half in a dish with roasted soybean powder and the other half in a dish with Castella cake crumbs. Roll each piece evenly to coat them completely with the respective coatings.
Step 13
Finally, slice the coated Injeolmi into bite-sized pieces. Your delicious 2-color “Kong-Guk-mul” Injeolmi is now ready to be enjoyed!
