Basic Ingredients- 4 fresh eggs
- 1/4 small onion
- 1/4 small zucchini
Seasoning & Liquid- 50ml clear water (or kelp broth)
- 1 Tbsp rice wine or cooking wine (to remove gamey smell)
- 1/3 Tbsp fish sauce (for umami)

Cooking Instructions
Step 1
Prepare the vegetables that will add flavor to your steamed egg. Using fresh vegetables will make it even more delicious.
Step 2
Finely mince the onion and zucchini. Mincing them small will ensure they blend smoothly into the steamed egg.
Step 3
Lightly coat the inside of the earthenware pot (tteokbaegi) with sesame oil. This prevents the steamed egg from sticking and adds a subtle sesame aroma.
Step 4
Crack the 4 fresh eggs into a bowl. Add 50ml of clear water, 1 Tbsp of rice wine (or cooking wine), and 1/3 Tbsp of fish sauce. Gently whisk them together, avoiding excessive foam. For an even smoother texture, you can strain the mixture through a sieve, but it’s okay to skip this step if you’re short on time.
Step 5
Add the finely chopped vegetables to the egg mixture and stir well. Place the earthenware pot over low heat. Stir continuously with chopsticks or a spatula to prevent sticking and ensure even cooking. Be careful not to let the egg scramble.
Step 6
Once the egg mixture begins to set and look softly curdled, reduce the heat to the lowest setting, cover the pot, and let it steam for a few minutes. When you notice the steamed egg puffing up, turn off the heat and finish. Letting it rest covered for 1-2 minutes allows it to become even more moist and tender.
