A clever trick for peeling tomatoes! If using multiple tomatoes, blanching them in boiling water works best. However, for a single tomato, the microwave is your best friend. Place the tomato in a microwave-safe dish, add a little water, and microwave – the skin will peel off effortlessly!

To start, gently score the top of the tomato with a cross shape using a knife; this helps with peeling. Then, place the tomato in a microwave-safe bowl. Add about 1-2 tablespoons of water to help it steam and soften, which will aid in peeling and also add moisture to the sauce.

Microwave on high for about 1 minute 30 seconds to 2 minutes. The exact time may vary depending on the size of your tomato and the power of your microwave. Be careful when handling the tomato afterward, as it will be hot; use tongs or oven mitts.

While the tomato is in the microwave, prepare your other aromatics. Finely dice the onion and thinly slice the garlic cloves. This preparation will enhance the release of their flavors during cooking.
