Nourishing Vegetable Soup Recipe for Detox and Health: Making Tomato Vegetable Soup
After indulging in bread too frequently for a couple of months, I noticed my body felt bloated and sluggish. I decided it was time to cut back on bread and increase my intake of fruits and vegetables. Upon seeing the benefits of a fruit and vegetable-focused diet on YouTube, I felt motivated to start immediately. I decided to make the ‘Healing Soup’ from Jumani’s recipe, which I had saved. This soup tastes similar to a detox juice but is incredibly comforting and easy on the stomach. Let’s get started on making this beneficial detox vegetable soup!
Detox Soup & Vegetable Soup Core Ingredients- Broccoli (a small amount)
- Cabbage (1 head)
- Tomatoes (4)
- Onion (1)
- Garlic (8 cloves)
- Carrots (3)
- Mushroom Broth (5 cups)
Cooking Instructions
Step 1
Feel free to add or omit vegetables according to your preference, beyond the basic recipe. I added various vegetables I had in my refrigerator to make it more substantial. To ensure thorough cleaning, soak the vegetables in water with a splash of vinegar for a short while before rinsing.
Step 2
Prepare one medium onion, a bit of frozen broccoli, and some leftover vegetables. I’m using pre-minced garlic for convenience.
Step 3
I used oyster mushrooms from my pantry to make the mushroom broth. If you don’t have enough mushroom broth, you can supplement with water.
Step 4
First, place thinly sliced onion in a pot. Add minced garlic that was sliced about 10 minutes ago. Add a small amount of mushroom broth and simmer for about 10 minutes to allow the flavors of the onion and garlic to infuse.
Step 5
Meanwhile, thinly slice the cabbage and celery. Celery is optional if you don’t have it on hand.
Step 6
Cut the tomatoes and carrots into bite-sized pieces. You can leave the skin on the tomatoes, or peel them for a smoother texture if you prefer.
Step 7
After simmering the onion and garlic for 10 minutes, add all the prepared cabbage, tomatoes, celery, and carrots to the pot. Pour in the mushroom broth, and add the broccoli and any remaining mushrooms. Bring everything to a boil.
Step 8
Once the soup comes to a boil, reduce the heat to medium-low. Cover the pot and let it simmer for about 30 minutes, allowing the vegetables to become very tender. Cook until the vegetables are soft and easily mashable.
Step 9
Using an immersion blender (low-speed blender), puree the vegetables that have been simmered for 30 minutes until smooth. If using a standard blender, be cautious of hot liquid splashing out.
Step 10
Take a portion of the prepared soup and blend it with a small amount of fruit like apple, banana, or beet. Since the basic vegetable soup is not sweet, adding fruit makes it much more palatable. Blended this way, it tastes very similar to a detox juice!
Step 11
The soup on the left is the pure vegetable soup without added fruit, and the one on the right is the detox soup blended with fruit. Enjoy them according to your preference.
Step 12
Portion the finished soup into individual servings and store in the freezer. When ready to eat, simply reheat using a double boiler for a convenient meal.
