As a token of my gratitude to my mother who prepares breakfast for me every morning, I’ve prepared this special brunch menu! These hotcakes are perfect for a simple, satisfying meal or a delightful snack, especially on hot days like these. Enjoy a warm and happy time with your loved ones! ♡^^
Hotcake Batter Ingredients- 1 fresh egg
- 1 cup milk (using a paper cup for measurement)
- 1 tablespoon sugar (optional, reduce to half a tablespoon if you prefer less sweetness)
- 2 cups hotcake mix (using a paper cup for measurement)
- 1 teaspoon vanilla extract (optional, enhances flavor)

Cooking Instructions
Step 1
First, crack 1 fresh egg into a large bowl. Use a fork or whisk to beat the egg until the yolk and white are well combined.
Step 2
Once the egg is sufficiently beaten, slowly pour in 1 cup of milk, measured using a paper cup. Stir gently to combine without any lumps.

If you’d like to add a touch of aroma to your batter, add 1 teaspoon of vanilla extract. (This step is optional, but it adds a richer fragrance.)

Add 1 tablespoon of sugar, measured with a regular spoon. If you prefer a less sweet taste, reduce the sugar to half a tablespoon to adjust to your liking.

Now, add 2 cups of hotcake mix, measured with a paper cup, to the batter. Sifting the mix into the batter can help create a smoother hotcake.

Using a spatula or whisk, mix the batter until it’s smooth and free of lumps. Avoid overmixing; just blend until the flour is incorporated for a tender texture. (The size of the ladle doesn’t matter; the important thing is the batter’s consistency, which should be pourable.)

Preheat your frying pan over medium-low heat. If the pan is too hot, the hotcakes can burn easily, so gentle heating is recommended.

Once the pan is heated, ladle your desired amount of batter onto the pan for each hotcake. Cook for about 3-4 minutes per side, or until bubbles start to appear on the surface and pop.
Step 9
When you see small bubbles forming and popping on the surface of the hotcake, carefully flip it with a spatula. Cook the other side for a similar amount of time until golden brown.
Step 10
Once both sides are beautifully golden brown, carefully transfer the finished hotcakes to a plate. Garnish with fresh blueberries and a dollop of plain yogurt for a delicious and attractive presentation. Enjoy!
