As a student living alone, I found that adding Cheongyang peppers instead of pickling spices suited my taste much better! I also increased the amount of vinegar slightly to balance the sweetness. First, thoroughly wash and sterilize your glass jar(s) by boiling them in water, then let them cool and dry completely. Peel the purple onions and cut them into bite-sized pieces (about 2-3 cm). Remove the stems from the Cheongyang peppers; you can leave them whole or slice them diagonally if you want more flavor infusion. Place the cut purple onions into the sterilized jar. Putting the Cheongyang peppers at the bottom of the jar can help the flavors meld better.

Now, let’s make the delicious pickle brine. In a pot, combine 2 cups of water, 1.3 cups of vinegar, and 0.7 cups of sugar. (The standard ratio is often 2:1:1 for water:vinegar:sugar, but I prefer it tangier, so I increased the vinegar and reduced the sugar.) Adjust the quantities based on the amount of onions you are pickling, ensuring you make enough brine to fully cover the ingredients. Bring the mixture to a boil over medium heat, stirring until the sugar is completely dissolved.

Once the brine is vigorously boiling, turn off the heat. Immediately pour the hot brine over the onions in the sterilized jar, ensuring the onions are completely submerged. Securely close the lid right away. This creates a seal that helps preserve the pickles for longer.

Leave the sealed jar at room temperature for one to two days to allow the flavors to develop. You’ll notice the beautiful color of the purple onions infusing into the brine.
