Deliciously Chewy and Sweet Braised Lotus Root (Yeongeun Jorim)
Making a Savory Side Dish with Nutritious Lotus Root
I made a delicious braised lotus root dish using a bag of lotus root easily found at the market. The chewy texture and sweet-salty sauce are perfect as a side dish for rice!
Main Ingredients
- 1 bag lotus root (approx. 300-400g)
Braising Sauce
- 1/2 cup soy sauce (approx. 100ml)
- 3 cups water (approx. 600ml)
- 1/3 cup brown sugar (approx. 60-70g)
- 3 Tbsp corn syrup (approx. 45ml)
- 1 Tbsp sesame oil (approx. 15ml)
- A pinch of sesame seeds
- 1/2 cup soy sauce (approx. 100ml)
- 3 cups water (approx. 600ml)
- 1/3 cup brown sugar (approx. 60-70g)
- 3 Tbsp corn syrup (approx. 45ml)
- 1 Tbsp sesame oil (approx. 15ml)
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare one bag of fresh lotus root, readily available at the supermarket. Peel the lotus root and rinse it thoroughly.
Step 2
Now, let’s make the braising sauce. In a pot, combine 1/2 cup soy sauce, 3 cups water, and 1/3 cup brown sugar. Stir well to mix. You can use white sugar instead of brown sugar, but brown sugar adds a deeper flavor.
Step 3
Add the prepared lotus root to the pot with the sauce. Bring it to a boil over high heat. Once it starts boiling, reduce the heat to medium and simmer uncovered for about 30 minutes, or until the lotus root is tender and the sauce has reduced.
Step 4
When the lotus root is almost reduced, drizzle 3 tablespoons of corn syrup evenly over the lotus root in the final stage. Adding corn syrup enhances the shine and concentrates the sweetness, making it even more delicious. Continue to simmer for another 2-3 minutes.
Step 5
Simmer until most of the water has evaporated and the sauce coats the lotus root thinly. This marks the basic completion of your delicious braised lotus root. Be careful not to overcook, to maintain the chewy texture of the lotus root.
Step 6
Finally, turn off the heat, drizzle in 1 tablespoon of sesame oil, and sprinkle with sesame seeds to finish. The nutty aroma of sesame oil and the slight crunch of sesame seeds will further enhance the flavor of the braised lotus root. Your delicious braised lotus root is complete!
