Here’s a super easy vegetable fried rice recipe perfect for those times when you don’t have much else to eat at home. Since it’s for the kids too, it has to be delicious for them, which is always a challenge! This recipe is just perfect for those moments! It’s a go-to when you need a quick, satisfying meal that everyone, especially children, will enjoy.
Main Ingredients- 2 cups cooked rice (warm)
- 1/4 onion, finely diced
- Small amount of carrot, finely diced
- 1/2 stalk green onion or scallion, finely chopped
- 2 eggs
- 50g Spam, finely diced
- 2 Tbsp ketchup
- 2 Tbsp oyster sauce
- Pinch of black pepper
Cooking Instructions
Step 1
First, finely dice the carrot and green onion. Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped green onions and stir-fry until fragrant, creating a ‘scallion oil’ base. This step is crucial for building the flavor of the fried rice. Once the scallion aroma is prominent, add the diced carrots and stir-fry until they are slightly tender.
Step 2
When the scallions and carrots are partially cooked, add the diced Spam and diced onion to the pan. Spam releases its own fat, so you might not need much additional oil. Continue to stir-fry until the Spam is lightly browned and the onions are translucent. Ensuring the Spam is fully cooked enhances the flavor.
Step 3
Now, push the cooked vegetables and Spam to one side of the pan. Crack the two eggs into the empty space. Gently break the yolks and scramble them, stirring with chopsticks or a spatula until about 80% cooked and softly set. Once the eggs are semi-scrambled, gently mix them with the vegetables and Spam, stir-frying everything together. The soft scrambled eggs will integrate wonderfully with the rice.
Step 4
With all ingredients combined, add the 2 cups of warm cooked rice. Use a spatula to break up any clumps and stir-fry evenly. Once the rice is loosened, add 2 tablespoons of ketchup, 2 tablespoons of oyster sauce, and a pinch of black pepper. Turn the heat up to high and stir-fry vigorously for 2-3 minutes, allowing the sauces to coat each grain of rice. When the rice grains are distinct and glossy, your delicious vegetable fried rice is ready!
