Kimbap Base Ingredients
- 4 cups cooked rice (freshly made and warm)
- 4 frank sausages
- 2 eggs
- 4 sheets of kimbap seaweed (gim)
- 1 carrot (medium-sized)
- 1 green bell pepper (or paprika)
Crunchy Pickled Onions
- 1 medium onion
- 1/3 tbsp sea salt
- 2 tbsp vinegar
Creamy Tuna Mayo Filling
- 1 can tuna (drained of oil)
- 3 tbsp mayonnaise
- 2 pinches of salt
- 1 pinch of black pepper
- 1 medium onion
- 1/3 tbsp sea salt
- 2 tbsp vinegar
Creamy Tuna Mayo Filling
- 1 can tuna (drained of oil)
- 3 tbsp mayonnaise
- 2 pinches of salt
- 1 pinch of black pepper
Cooking Instructions
Step 1
First, let’s prepare the pickled onions to enhance the flavor of our kimbap. Thinly slice one medium onion and place it in a bowl. Add 1/3 tablespoon of sea salt and 2 tablespoons of vinegar, mixing well. Let it pickle for about 15 minutes. After pickling, squeeze out the excess water firmly to maintain a crisp texture and prevent any bitterness. Set the prepared onions aside.
Step 2
Next, we’ll make the star of our kimbap: the tuna mayo filling. In a bowl, combine one can of drained tuna with the squeezed pickled onions. Add 3 tablespoons of mayonnaise, 2 pinches of salt, and a pinch of black pepper. Mix everything thoroughly until well combined. Incorporating the pickled onions not only removes any fishy odor from the tuna but also adds a satisfying crunch and a bright, fresh flavor.
Step 3
Now, let’s prepare the remaining ingredients for our kimbap (enough for 4 rolls). Cut each of the 4 frank sausages in half crosswise. Thinly julienne one medium carrot and one green bell pepper (or paprika). Sauté the julienned carrot in a pan with a little oil until slightly tender and sweet. Lightly sauté the bell pepper to retain its crispness. For the egg, make a thin omelet, roll it up, and slice it into thick strips. (If you use 3 eggs, you can make an even thicker egg omelet kimbap).
Step 4
Lay one sheet of kimbap seaweed (gim) with the rough side facing up. Spread about 2/3 of a bowl of warm, cooked rice thinly over the seaweed. Arrange the tuna mayo filling generously over the rice. Next, artfully place the sautéed carrot, bell pepper, egg strips, and sausage strips alongside each other on top of the tuna mayo. Be careful not to overfill, as this can cause the kimbap to break when rolled.
Step 5
It’s time to roll the kimbap tightly! Lift the edge of the seaweed closest to you, folding it over the fillings. Use your thumbs to press down on the fillings as you roll the kimbap forward, ensuring it’s firm and compact. You can slightly mash some rice grains or lightly moisten the edge of the seaweed with water to help seal the roll securely.
Step 6
Now, slice the beautifully rolled kimbap into bite-sized pieces. To prevent the seaweed from tearing, lightly wet your knife or brush it with sesame oil before slicing. Your delicious Tuna Mayo Kimbap is ready to be enjoyed!
