First, prepare the vegetables. Wash the carrots thoroughly and julienne them thinly. If you have imitation crab sticks, prepare them as well. For the eggs, separate the yolks and whites, then make thin omelets (jidan). Slice these omelets into bite-sized pieces. (For a Gyeongju Gyori Kimbap style, you can julienne the egg omelets into thin strips.)

Season the warm cooked rice with 1 tsp of salt and 1 tsp of sesame oil, mixing well. Wash the perilla leaves and pat them dry. Thoroughly drain the oil from the canned tuna. Arrange all prepared filling ingredients neatly for easy assembly.

Place a sheet of seaweed on a bamboo rolling mat, shiny side down. Spread a thin layer of seasoned rice over about two-thirds of the seaweed, leaving the top third (the part furthest from you) bare. Lay the perilla leaves over the rice. Then, layer your fillings: egg omelet strips, pickled radish, seasoned burdock root, and the tuna-mayo mixture. Be careful not to overfill, as this can cause the kimbap to break when rolled.

Using the bamboo mat, carefully and tightly roll the kimbap, ensuring the fillings stay in place. Begin by folding the edge of the mat over the fillings closest to you, then use the mat to firmly roll the kimbap forward. Roll it tightly to create a compact cylinder. A well-rolled kimbap will have a neat, round shape.

Once rolled, you can brush the outside of the kimbap with a little sesame oil for shine and then slice it into desired pieces. (Optional) For a unique and attractive presentation, try making a ‘nude kimbap’ where the rice is on the outside instead of the inside.
