Main Ingredients- 1 can (150g) medium-sized tuna
- 1/2 medium onion (approx. 100g)
- 3 Tbsp white part of green onion (approx. 30g)
- 2 Korean green chili peppers (adjust to spice preference)
- 4 Tbsp water
- 1/2 Tbsp toasted sesame seeds
Tuna Stir-fry Seasoning- 1 Tbsp gochugaru (Korean chili flakes, approx. 7g)
- 2 Tbsp sugar (approx. 20g, adjust to taste)
- 1 Tbsp minced garlic (approx. 20g)
- 5 Tbsp soy sauce (approx. 40g, use regular soy sauce, not soup soy sauce)
- 1 Tbsp sesame oil (approx. 5g)
- 1 Tbsp mayonnaise (approx. 12g)
- 1 Tbsp gochugaru (Korean chili flakes, approx. 7g)
- 2 Tbsp sugar (approx. 20g, adjust to taste)
- 1 Tbsp minced garlic (approx. 20g)
- 5 Tbsp soy sauce (approx. 40g, use regular soy sauce, not soup soy sauce)
- 1 Tbsp sesame oil (approx. 5g)
- 1 Tbsp mayonnaise (approx. 12g)
Cooking Instructions
Step 1
First, prepare half of a medium onion. If you really like onions, feel free to use a whole one. The onion’s sweetness will enhance the bibimbap’s flavor.
Step 2
Dice the prepared onion into approximately 1cm cubes. If you chop it too finely, it might turn mushy when stir-frying, so aim for a moderate size.
Step 3
Use the white parts of the green onions primarily. The white parts have a rich sweetness and aroma that are perfect for stir-fries. The green parts are better suited for making soup later.
Step 4
Lightly chop the white parts of the green onions a few times with a knife. It’s best to chop them so they have a slight texture rather than making them finely minced.
Step 5
If you enjoy a spicy kick, add about 2 chopped Korean green chili peppers. You can adjust the amount according to your preference, or omit them if serving to children.

Now, add the chopped green onions, onions, and green chilies to the pan. They will release a delicious aroma as they cook.

It’s best to use medium-grind gochugaru (Korean chili flakes) for this recipe. Fine gochugaru can burn easily, while coarse gochugaru might not dissolve well.

Add about 2 tablespoons of sugar. You can always add more sweetness later after tasting, so adding it slightly heaping at first is a good strategy.

Add 1 tablespoon (approx. 20g) of minced garlic. The garlic’s fragrance will meld beautifully with the tuna, making it even more delicious.

Add 5 tablespoons of soy sauce. Using regular soy sauce (jin ganjang) instead of light soy sauce (yangjo ganjang) will bring out a richer umami flavor.

Drizzle in 1 tablespoon of sesame oil. If you find the sesame oil aroma too strong or are concerned about it burning during stir-frying, you can substitute it with cooking oil.

Add a generous tablespoon of mayonnaise. Mayonnaise adds a creamy, savory, and nutty flavor to the dish.

We’re using a medium-sized can of tuna (150g). If you have a larger 200g can, feel free to use that. More tuna means a more satisfying meal!

When draining the tuna, tilt the can lid slightly to let the oil drip out. Don’t drain all the oil, as some of it helps preserve the tuna’s flavor and moisture.

Press down firmly on the can lid to more effectively drain any remaining oil. Be careful not to cut yourself while doing this.

Be careful when opening the tuna can to avoid cutting your fingers. Many cans now come with safety pull tabs, which make opening them much safer!

Add all the drained tuna to the pan. It’s now time to stir-fry everything together until well combined.

To capture any remaining tuna bits, pour about 4 tablespoons of water into the empty tuna can and scrape out the rest of the tuna, then add it to the pan. This ensures you use every bit of flavor.

Gently break up the tuna with a spatula or spoon to ensure there are no large chunks. This makes it easier to mix and eat with rice.

Start stir-frying all the ingredients over medium heat. Once you hear a gentle sizzle, continue to cook for about 4-5 minutes.

After stir-frying for 4-5 minutes, most of the moisture should have evaporated, and the mixture will be thick and rich. This is the perfect consistency for your tuna stir-fry.
