A Fantastic Tofu Kimchi Appetizer Using Leftover Fried Chicken
Have some fried chicken left over? Don’t worry! You can make a special and delicious Tofu Kimchi appetizer using that leftover chicken. It’s simple yet offers a rich flavor, perfect for a delightful time.
Main Ingredients- 1/2 block firm tofu
- 2 cups well-fermented kimchi
- 1 cup leftover fried chicken (bones removed)
- 1/2 stalk green onion
Seasoning- 1 Tbsp sugar
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 cup water
- A little sesame oil
- A little toasted sesame seeds

Cooking Instructions
Step 1
Rinse the well-fermented kimchi and chop it into bite-sized pieces. Place the chopped kimchi in a pan. If the kimchi is too sour, you can add a little extra sugar.
Step 2
Add 1 Tbsp of sugar and 1 Tbsp of gochugaru to the chopped kimchi. Stir-fry over medium heat until the kimchi softens and absorbs the seasoning well. Be careful not to burn it while stir-frying.
Step 3
For better texture, remove the bones from the leftover fried chicken and prepare only the meat. You can shred or cut the chicken meat into bite-sized pieces.
Step 4
Add the prepared chicken meat to the well-stir-fried kimchi. Pour in 1/2 cup of water. Stir occasionally to prevent sticking, and let it simmer until slightly reduced. The chicken’s flavor will blend beautifully with the kimchi seasoning, making it even more delicious.
Step 5
Wash the green onion, remove the outer leaves, and slice it diagonally about 0.5 cm thick. Add the sliced green onion to the stir-frying kimchi and chicken, mix gently, and cook just enough to release its aroma.
Step 6
Finally, drizzle in a little sesame oil for aroma and sprinkle some toasted sesame seeds for a nutty flavor. Stir lightly to combine all the ingredients evenly. Your delicious stir-fried kimchi is now ready.
Step 7
Lightly blanch the tofu in boiling water until warm, or simply slice it into desired portions and arrange on a plate. Generously spoon the warm stir-fried chicken kimchi over the tofu. This completes your hearty and flavorful Tofu Kimchi dish, a perfect pairing with makgeolli or beer!
