Among all types of sushi, I quite enjoy tamagoyaki (rolled omelet) sushi. So, I often make it at home. Today, I decided to make tamagoyaki sushi for dinner. I also made spam sushi alongside it. It’s a delightful combination that’s perfect for a satisfying meal.

Sushi Rice

  • 4 Tbsp rice vinegar
  • 2 Tbsp sugar
  • 0.5 tsp salt

Tamagoyaki (Rolled Omelet) Ingredients

  • 6 eggs
  • 5 Tbsp bonito broth or kelp broth
  • 1 Tbsp mirin (sweet rice wine)
  • 1.5 Tbsp sugar
  • 3 pinches of salt

Toppings

  • 1 can of Spam
  • 2 sheets of gimbap seaweed (cut in half lengthwise)

Cooking Instructions

To infuse the tamagoyaki with a delightful umami flavor, let’s start by making a bonito broth. In a bowl of lukewarm water, add a handful of bonito flakes and let them steep for about 5 minutes to extract their rich aroma and flavor. This infused liquid will be key to a delicious omelet.

Crack 6 fresh eggs into a medium bowl and whisk them thoroughly. To ensure a smooth and delicate texture for your rolled omelet, pass the beaten eggs through a fine-mesh sieve to remove any chalazae (the white, stringy bits).

To the strained egg mixture, add 5 tablespoons of the prepared bonito broth (or kelp broth), 1 tablespoon of mirin, 1.5 tablespoons of sugar, and 3 pinches of salt. Place the cut Spam slices in a heated frying pan and cook them until they are golden brown on both sides. Grilling the Spam until it’s nicely browned enhances its savory flavor and creates a wonderful contrast with the sushi rice. You may want to dab away excess oil with a paper towel as it cooks.

It’s time to season the sushi rice. In a large bowl containing 4 cups of cooked rice (preferably slightly warm, not hot), add 4 tablespoons of rice vinegar, 2 tablespoons of sugar, and 0.5 teaspoon of salt. Gently fold the seasoning into the rice using a rice paddle, being careful not to mash the grains. Seasoning the rice while it’s warm helps the flavors to meld beautifully.

Take your gimbap seaweed sheets and cut them in half lengthwise, creating slightly elongated strips. These will be used to wrap around the sushi.

Place a thick slice of the prepared tamagoyaki on top of each rice ball, and then wrap a strip of seaweed around the middle to hold it all together. You’ve just made delicious tamagoyaki sushi!
