- Pinch of ginger powder
- 7 Tbsp Soy sauce for seasoning (Guk-ganjang or Jin-ganjang)
- 2 Tbsp Brown sugar
- 1 Tbsp Generous amount of minced garlic
- Pinch of black pepper (a few shakes)
- 3 Tbsp Mirin (or cooking wine)
- 1 Tbsp Plum extract (Maesil-cheong)
- Pinch of ginger powder
Cooking Instructions
Step 1
First, gently press the pork bulgogi cut (450g) with paper towels to remove any excess blood. Removing blood is key to achieving a clean flavor without gamey notes. Slice the pork into bite-sized pieces and place them in a large bowl. Add 3 tablespoons of mirin and gently massage the pork to marinate. This step will tenderize the meat and remove any unwanted odors.
Step 2
Slice half an onion thinly. Cut the green onion into diagonal pieces. Thinly slice the carrot into your desired shape. If you prefer a spicier kick, finely chop one Cheongyang chili pepper. Set all the prepared vegetables aside.
Step 3
Now, let’s prepare the marinade that will define the flavor of your Pork Bulgogi. In a bowl, combine 7 tablespoons of soy sauce for seasoning, 2 tablespoons of brown sugar, a generous tablespoon of minced garlic, a few shakes of black pepper, 3 tablespoons of mirin, 1 tablespoon of plum extract, and a pinch of ginger powder. Stir well with a spoon until the sugar is completely dissolved. Ensure all ingredients are thoroughly mixed.
Step 4
Pour the prepared marinade over the pork that you have already lightly marinated.
Step 5
Gently massage the pork with your hands to ensure the marinade coats every piece evenly. It’s important to mix thoroughly so the marinade penetrates the meat well. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. This marinating period allows the flavors to deepen and meld, resulting in a much richer taste.
Step 6
Heat a skillet over medium-high heat. Add the marinated pork and all the prepared vegetables. Stir-fry quickly, continuously moving the ingredients with a spatula to prevent burning. Cook until the pork is fully cooked through and the vegetables are tender. Your delicious Pork Bulgogi is now ready! Serve hot on a plate for a delightful meal that pairs perfectly with a bowl of rice.
