Prepare 2 tablespoons of salted fermented shrimp (saeujeot). Since saeujeot is quite salty on its own, it’s best to taste and adjust the seasoning as you cook, rather than adding too much at the beginning. Including the liquid from the saeujeot will enhance the umami flavor.

Now it’s time to stir-fry. Heat a wide wok or frying pan over medium heat, then add 2 tablespoons of cooking oil. Add the julienned carrot, onion, sliced zucchini, chopped green onion, and minced garlic. Stir-fry over high heat quickly until the vegetables are slightly softened.
