- 0.5 Tbsp sesame oil
- Sesame seeds (to taste)
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp ketchup
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp oligodang (corn syrup or similar sweetener)
- 1 Tbsp cooking wine (mirin, etc.)
- 1 cup water (200ml)
- 0.5 Tbsp sesame oil
- Sesame seeds (to taste)
Cooking Instructions
Step 1
First, let’s make the key component of this delicious stir-fry: the sauce. In a mixing bowl, combine 1 Tbsp of minced garlic, 1 Tbsp of gochujang, and 1.5 Tbsp of ketchup for sweetness. Next, add 1 Tbsp of plum extract for a sweet and sour kick, 1 Tbsp of oligodang for shine and sweetness, and 1 Tbsp of cooking wine to enhance the flavor and remove any potential gamey notes.
Step 2
Now, pour in 1 cup (about 200ml) of water, which will form the base of our sauce. Finally, add 0.5 Tbsp of sesame oil for a nutty aroma. Whisk everything together thoroughly with a whisk or spoon until the sauce is well combined and smooth. Your flavorful sauce is ready!
Step 3
Let’s prepare the vegetables that will add color and texture to the dish. Slice half an onion into large pieces. Thinly slice a small amount of carrot for color. If you have cabbage or zucchini in your refrigerator, feel free to add them for an even more satisfying stir-fry. Aim to use no more than half a handful of all the vegetables combined, to maintain a good balance. These prepared vegetables will be added directly to the stir-fry without pre-cooking.
Step 4
Heat a pan over medium-high heat and pour in all the prepared sauce. Bring the sauce to a boil. Once it starts bubbling, add all the sliced vegetables. Reduce the heat to medium and stir-fry quickly. Cook just until the vegetables begin to soften slightly. Be careful not to overcook them, as you want them to retain some of their crispness.
Step 5
When the onions start to turn translucent and soften, it’s time to add the star ingredient: the leftover Tangsuyuk. Gently toss everything together to ensure the Tangsuyuk is evenly coated with the sauce and vegetables. Reduce the heat to low. Continue to stir-fry slowly for a sufficient amount of time, allowing the Tangsuyuk to heat through completely and absorb the flavors of the sauce. The key here is to ensure the meat is heated through without making the crispy coating too soggy.
Step 6
We’re almost done! For the final touch, sprinkle a generous amount of sesame seeds for an extra nutty flavor and aroma. Give it one last gentle stir to incorporate the seeds. Your delicious Tangsuyuk Stir-Fry is now ready to be enjoyed. It tastes best served immediately while hot!
