Have leftover Altari kimchi that’s still good but not enough for a full batch of kimchi? Instead of letting it go to waste, transform it into a delicious ‘Altari Jjim-i’! Ingredients- Leftover Altari Kimchi (about 1 small container’s worth)
- 3 Tbsp Perilla Oil (Deulgireum)
- Water (enough to cover lightly)
- 3 Tbsp Sugar
- 1 tsp Dasida (or other MSG-based seasoning)
- 1 tsp Toasted Sesame Seeds
Cooking Instructions
Step 1
Don’t let your leftover Altari kimchi go to waste! We’re going to turn those slightly aged stems and radishes into a delicious ‘Altari Jjim-i’. Start by pouring the leftover Altari kimchi, along with its kimchi juice, into a wok or a wide, deep pan. The kimchi juice will become a flavorful base as it reduces.
Step 2
Add about 3 tablespoons of perilla oil. This will impart a wonderful nutty aroma that complements the radish greens beautifully, enhancing the overall flavor of the dish.
Step 3
Pour in enough water to lightly cover the Altari. It’s best to add water gradually rather than all at once, as too much water will prolong the cooking time.
Step 4
If your Altari kimchi is quite sour, adding sugar is key to balancing the flavors. Stir in 3 tablespoons of sugar to counteract the tartness and create a smoother, more palatable taste. Mix everything well.
Step 5
Now it’s time to cook! Begin by boiling over medium-high heat. Once the water starts to reduce, lower the heat to medium-low and let it simmer slowly. I simmered mine for about 40 to 50 minutes, allowing the liquid to reduce until it was almost gone. Slow simmering is essential for developing deep flavors.
Step 6
After about 40 minutes of simmering, taste the dish. If it needs more seasoning, add 1 teaspoon of Dasida (or a similar umami-rich seasoning) and stir well. Dasida adds depth with just a small amount. Turn off the heat when the mixture is moist but not watery, with a nice sheen.
Step 7
To finish, drizzle another tablespoon of perilla oil over the ‘Altari Jjim-i’ and sprinkle generously with toasted sesame seeds. Your delicious stir-fried radish greens are ready!
