First, let’s prepare the ingredients. Peel the potatoes and cut them into about 1.5cm cubes. Cutting them too small might cause them to break apart during cooking, so aim for a suitable size. Slice the onion or chop it roughly, and finely chop the Korean chili pepper after removing the seeds. Chop the white and green parts of the green onions separately. Heat a generous amount of cooking oil in a pan over medium-low heat and add the cubed potatoes. Stir gently while stir-frying until the potatoes are about 2/3 cooked. Be mindful of the heat to prevent them from burning.
Step 3
Once the potatoes are partially cooked, add 1/3 cup of soy sauce, 1 teaspoon of sugar, and a pinch of black pepper. Stir-fry them together, gently mixing to ensure the seasoning coats the potatoes evenly.
