  • 1/2 pack Enoki Mushrooms (trim ends and separate strands)
  • A small bunch of Chives (cut into bite-sized pieces)

Special Sauce

  • 3 Tbsp Soy Sauce
  • 2 Tbsp Gochujang (Korean chili paste)
  • 1/3 Tbsp Doenjang (Korean soybean paste)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Rice Wine or Soju (to remove duck smell)
  • 1 Tbsp Minced Garlic
  • 1 tsp Ginger Juice (or minced ginger)
  • 1 Tbsp Plum Extract (for sweetness and flavor)

Cooking Instructions

Heat a large pan over medium-high heat. Add the sliced raw duck meat and stir-fry for about 4-5 minutes until the pink color disappears. Thoroughly cooking until the red hue is gone is the first step to eliminating any gamey smell.

Don’t discard the duck fat that renders while cooking! This fat adds flavor and will be used later to sauté the vegetables and sauce. You’ll hear a delicious sizzling sound.
