Main Ingredients- 6 cups cooked soybeans
Seasoning Ingredients- 1 cup Doenjang (fermented soybean paste)
- 1 cup Gochujang (fermented chili paste)
- 1 cup minced onion
- 1/4 cup Gochugaru (Korean chili flakes)
- 1/4 cup sugar
- 1 Tbsp minced garlic
- 4 Tbsp sesame oil
- 1 cup Doenjang (fermented soybean paste)
- 1 cup Gochujang (fermented chili paste)
- 1 cup minced onion
- 1/4 cup Gochugaru (Korean chili flakes)
- 1/4 cup sugar
- 1 Tbsp minced garlic
- 4 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare 6 cups of dried soybeans and soak them in water for 12 hours. Once soaked, boil the soybeans until they are tender, similar to how you would prepare them for ‘Kongguksu’ (Korean soy milk noodle soup). This step ensures a wonderfully smooth texture for your ssamjang.
Step 2
Drain the cooked soybeans thoroughly using a sieve. It’s crucial to remove as much water as possible to prevent the ssamjang from becoming watery or bland.
Step 3
Place the drained soybeans into a food processor or chopper and finely mince them. Mincing the soybean skins along with the beans will add extra flavor and nutrients to your ssamjang.
Step 4
Now, it’s time to mix the base seasonings. Start by adding 1 cup of traditional Doenjang, which provides a rich, savory depth, and mix it well.
Step 5
Next, add 1 cup of Gochujang for a sweet and spicy kick. Mix it thoroughly with the Doenjang. Feel free to adjust the ratio of Doenjang to Gochujang according to your personal preference.
Step 6
Incorporate 1 cup of minced onion to add sweetness and umami. Finely mincing the onion will also contribute a pleasant slight crunch and enhance the overall flavor profile.
Step 7
Add 1/4 cup of Gochugaru for a touch of heat and 1 tablespoon of minced garlic for its pungent aroma. Stir everything together until well combined.
Step 8
To balance the flavors, add 1/4 cup of sugar and mix again until fully incorporated. You can substitute sugar with honey or corn syrup if preferred.
Step 9
Combine all the prepared ingredients in a bowl. Use a spatula or spoon to mix vigorously, ensuring there are no lumps and all ingredients are evenly distributed.
Step 10
Finally, continue mixing until all ingredients form a cohesive, uniform mixture – your delicious ssamjang base is ready! Just before serving, drizzle in 4 tablespoons of sesame oil to add a nutty aroma and even richer flavor. Enjoy this homemade ssamjang with your favorite fresh vegetables for a delightful meal!
