Tteokbokki is a snack that never gets old; it truly deserves its title as a national favorite! These gloomy days make me crave something spicy. So, I whipped up some soup tteokbokki. It’s simple yet packed with deep flavor, perfect for the whole family.

Ingredients

  • 200g tteokbokki rice cakes (adjust quantity to your preference)
  • 1 ramen noodle pack
  • 1/4 head of cabbage, cut into bite-sized pieces
  • 1/5 carrot, thinly sliced
  • 5 hard-boiled eggs
  • 1 pack of store-bought spicy tteokbokki sauce (or substitute with gochujang, sugar, soy sauce, etc.)
  • 1 bunch of enoki mushrooms, trimmed and separated
  • 1/2 stalk of green onion, sliced diagonally

Cooking Instructions

Step 1

The foundation of delicious soup tteokbokki starts with the broth. Add 500ml of water (or 500ml of anchovy-kelp broth) to a pot and place the tteokbokki rice cakes in it. Using kelp broth will make the soup’s flavor much richer and more profound.

Once the rice cakes begin to soften, add the prepared cabbage and carrots and let them simmer together. As the vegetables cook, they will add sweetness and a refreshing taste to the broth.

When the soup starts to boil vigorously, add the ramen noodles. Next, pour in the store-bought spicy tteokbokki sauce. Today, I’m using a store-bought sauce for convenience, but you can also mix gochujang, sugar, soy sauce, and chili powder to make your own seasoning paste.

With delicious tteokbokki being made and ramen noodles added, this is shaping up to be a hearty meal. While adding extra ingredients might seem a bit tedious, it’s a fun process when you consider the delicious outcome.

As the sauce begins to thicken nicely, add the pre-boiled soft-boiled eggs. I added 5 eggs because I wanted plenty, and the soft eggs blend wonderfully with the spicy tteokbokki broth, creating a fantastic flavor.
