A simple, hearty one-bowl meal of classic kimchi fried rice, elevated with the addition of savory spam.
Main Ingredients- Well-fermented Kimchi: About 1/4 head (chopped into bite-sized pieces)
- Green Onion: About 1/4 stalk (thinly sliced)
- Spam or Luncheon Meat: 1/2 can (diced small)
- Kimchi Juice: 4 Tbsp
Cooking Instructions
Step 1
First, prepare the green onions and spam which will add flavor to the dish. Thinly slice the green onions and dice the spam into small, bite-sized pieces. Prepping the ingredients like this will make cooking much smoother.

Chop the kimchi finely, removing any excess core if necessary. If the kimchi pieces are too large, chopping them smaller will help them integrate better with the rice when stir-frying. Using well-fermented, slightly sour kimchi will result in a richer flavor.
Step 3
Now, let’s start stir-frying! Heat 1-2 tablespoons of cooking oil in a preheated pan. Add the sliced green onions and sauté over low heat until fragrant to release their aroma into the oil, creating ‘green onion oil’. Once the green onion aroma intensifies, add the diced spam and stir-fry until it’s lightly browned and has released some of its savory fat. This flavorful fat will coat the rice grains, making the fried rice even more delicious.
Step 4
Once the green onions and spam are sufficiently fried, add the finely chopped kimchi to the pan. Stir continuously to prevent sticking and ensure even cooking. Sauté the kimchi until it becomes slightly translucent and tender. Cooking over medium heat will help bring out the kimchi’s signature sweet and sour flavors.

Finally, add one bowl of cooked rice to the pan. Stir and toss everything together thoroughly, as if mixing the ingredients with the rice. Use your spatula to break up any clumps of rice and ensure each grain is coated with the kimchi and spam mixture. Stir-fry until well combined and heated through. Adding the 4 tablespoons of kimchi juice will add moisture and further enhance the flavor. If you find it needs more seasoning, you can add about 1/2 teaspoon of oyster sauce, but the saltiness from the kimchi and spam is often sufficient.
