A colorful plate is the foundation of a healthy meal, right? My child used to dislike eggplant, so I decided to make a universally appealing soy sauce seasoned eggplant salad!^^ This dish is wonderful as a side, but when mixed with a fried egg and rice, it transforms into a delightful ‘Eggplant Namul Bibimbap’^^. Even kids who usually shy away from eggplant will love this delicious meal!^^♡
Main Ingredients- 2 Eggplants
- 1/2 Onion
- 1/4 Carrot
- 5 cloves Garlic, minced
- 1/2 Green Onion
- 1 Dried Chili (or 2-3 Peperoncino)
Flavorful Seasoning- 1/4 cup Soy Sauce
- 1/4 cup Gochugaru (Korean chili flakes)
- A pinch of Sugar (about 1/2 tsp, adjust to taste)

Cooking Instructions
Step 1
First, wash the eggplants thoroughly under running water. Remove the stems and slice them diagonally about 1cm thick. Slicing them too thinly can make the texture mushy, so aim for a consistent, moderate thickness.
Step 2
Heat a pan over medium heat without any oil. Add the sliced eggplants and grill them gently. The eggplants will naturally release some moisture, preventing them from burning and ensuring they cook to a tender consistency. Once the eggplants are lightly browned and have softened, transfer them to a separate bowl to cool slightly.
Step 3
In a small pot, combine 2-3 tablespoons of water with thinly sliced onion, carrot, minced garlic, chopped green onion, and the dried chili. Bring to a gentle simmer and cook just until the vegetables become slightly translucent. Turn off the heat and mix in the soy sauce, gochugaru, and sugar to create a delicious soy sauce dressing. Finally, add the cooled eggplant to the dressing and gently toss everything together until well combined. This creates a flavorful soy sauce seasoned eggplant salad. For an extra touch, you can garnish with a drizzle of sesame oil and some toasted sesame seeds.
