- 1 stalk Fresh Green Onion
- 1/4 medium Onion
- 1/2 package Enoki Mushrooms
Flavorful Marinade- 5 Tbsp Soy Sauce
- 2 Tbsp Mirin or Cooking Sake
- 1 Tbsp Sugar
- 1 Tbsp Minced Garlic
- Pinch of Black Pepper (about 3 grinds)
- 0.5 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Corn Syrup or Oligodang (for a glossy finish!)
- 5 Tbsp Soy Sauce
- 2 Tbsp Mirin or Cooking Sake
- 1 Tbsp Sugar
- 1 Tbsp Minced Garlic
- Pinch of Black Pepper (about 3 grinds)
- 0.5 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Corn Syrup or Oligodang (for a glossy finish!)
Cooking Instructions
Step 1
First, prepare 300g of pork shoulder, sliced thinly for bulgogi. Gently rinse the meat under running water to remove any blood. Pat it thoroughly dry with paper towels to ensure a clean taste without any gamey odor. Set aside the green onion, separating the white and green parts, and wash the onion.
Step 2
Slice the onion into strips about 0.5 cm thick. Avoid slicing it too thinly, as this will maintain a pleasant texture when cooked.
Step 3
Cut the green onion into long pieces, about 10 cm in length. Then, cut these pieces into 4-5 smaller sections. This size makes them easy to eat with the meat and allows their flavor to infuse well during cooking.
Step 4
Now, let’s make the delicious marinade! In a bowl, combine 5 Tbsp soy sauce, 2 Tbsp mirin, 1 Tbsp sugar, 1 Tbsp minced garlic, a pinch of black pepper (about 3 grinds), and 0.5 Tbsp perilla oil. Mix well. Keep the corn syrup aside for now; we’ll add it while stir-frying the bulgogi. Adding corn syrup at the end gives the bulgogi a beautiful, glossy sheen.
Step 5
In a larger bowl, combine the drained pork slices and the prepared green onions. Trim the base of the enoki mushrooms and separate them into smaller clumps.
Step 6
Pour the prepared marinade over the pork and green onions. Gently mix everything together with your hands, ensuring the marinade coats every piece of meat evenly. This thorough mixing is key for deep flavor.
Step 7
If you have time, let the marinated pork rest in the refrigerator for about a day to develop even deeper flavors. However, it will still be delicious if cooked immediately! If you’re in a hurry, marinating for at least 30 minutes will also work well.
Step 8
Heat a pan over medium heat. Add the marinated bulgogi and begin to stir-fry. Once the surface of the meat turns white, reduce the heat to low and continue cooking gently until the pork is cooked through. This low and slow method keeps the meat wonderfully tender.
Step 9
When the pork is almost cooked, add the enoki mushrooms and stir-fry them along with the meat. Now is the time to add 1 Tbsp of corn syrup for that lovely gloss. Stir everything together until the mushrooms are slightly wilted, then turn off the heat and let it cook for another 2-3 minutes to finish. Your delicious soy sauce marinated pork bulgogi is ready to enjoy!
