Main Ingredients- Beef brisket 650g
- 1/2 Onion (cut into large pieces)
- 1 Cheongyang chili pepper (sliced diagonally)
- 1 piece Dried kelp (10x10cm)
- 1 Scallion (cut into large pieces)
- 3 Shiitake mushrooms (stems removed, cut into large pieces)
- 20 Whole garlic cloves (peeled)
- 1 Red chili pepper (sliced diagonally, for color)
Braising Sauce- 2 cups Soy sauce (400ml)
- 7 cups Water (1.4L)
- 1 cup Sugar (200ml)
- 2 tsp Ginger powder
- 15 Tbsp Rice wine (Cheongju)

Cooking Instructions
Step 1
In a wide pot, pour in 2 cups (400ml) of soy sauce for the braising liquid.

Add 7 cups (1.4L) of water.

Add 15 tablespoons of rice wine (Cheongju) to effectively remove any gamey smell from the beef.
