Simple and Satisfying Somyeon Noodle Recipe
Introducing a simple yet hearty somyeon noodle recipe perfect for busy days. The delightful chewiness of the noodles combined with a refreshing broth makes this dish an ideal meal. Feel free to enhance it with any leftover ingredients from your refrigerator!
Main Ingredients- Somyeon noodles, 4 servings (approx. 400g)
- Shiitake mushrooms, 2
- Dried kelp, 1 piece (10cm x 10cm)
- Dried anchovies for broth, 1 handful (about 10-15)
- Dried shrimp, 5-6 (optional)
- Dried octopus pieces, 1-2 (optional)
- Dried seaweed, 1 handful (soaked in water)
Cooking Instructions
Step 1
Bring a large pot of water to a rolling boil over high heat. Once boiling, gently add the somyeon noodles, loosening them with chopsticks to prevent sticking. Stirring gently is key to ensuring they don’t clump together.
Step 2
When the noodles start to float and boil up, add about half a cup of cold water and bring back to a boil. Repeating this step 2 to 3 times will result in perfectly chewy and springy noodles. Adjust the cooking time based on your preferred noodle texture.
Step 3
Drain the cooked noodles in a colander. Rinse them thoroughly under cold running water. This rinsing process removes excess starch, resulting in a cleaner taste and a more pleasantly chewy texture. Make sure to drain them well.
Step 4
In a separate pot, add water along with shiitake mushrooms, kelp, dried anchovies, and dried shrimp. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes to create a flavorful broth. Remove the solid ingredients from the broth. Add blanched shrimp, boiled octopus, and soaked seaweed to the broth and heat them gently. Place the cooked somyeon noodles in a serving bowl, then ladle the broth and toppings over them. Finally, add your prepared seasoning sauce to taste and mix well before enjoying. The toppings can be adapted based on what you have available in your refrigerator for a more abundant meal.
