Ingredients

  • 1 package of pre-cooked lotus root (from the supermarket)
  • Approx. 500ml water (enough to barely cover the lotus root)

Seasoning

  • 6 Tbsp Soy Sauce
  • 2 Tbsp Mirin (or cooking wine)
  • 2 Tbsp Sugar
  • 2 Tbsp Sesame Oil
  • Generous amount of Toasted Sesame Seeds
  • 2 Tbsp Corn Syrup (or rice syrup)

Cooking Instructions

Rinse the pre-cooked lotus root from the supermarket thoroughly under running water. To remove any potential bitterness or astringency, soak the lotus root in cold water for about 30 minutes. This step ensures a cleaner flavor.

Place the drained lotus root into a wide pot or wok. Add just enough water to barely cover the lotus root. Pour in 6 tablespoons of soy sauce. If you are using a seasoned soy sauce (like ‘mat-ganjang’), you might want to slightly reduce the amount of sugar and corn syrup. For this recipe, we’ll use regular soy sauce.

Add 2 tablespoons of sugar and 2 tablespoons of mirin (as a substitute for ‘cheongju’ or refined rice wine). Turn the heat to high and bring the mixture to a boil. Once boiling, reduce the heat slightly and let it simmer, allowing the lotus root to absorb the flavors. Stir occasionally to ensure even coating.

When the liquid has reduced significantly and is starting to thicken, lower the heat to low. Stir in 2 tablespoons of corn syrup to add a glossy finish. Continue to simmer gently for a few more minutes until the lotus root is tender and glazed.

Turn off the heat. Add 2 tablespoons of sesame oil and a generous amount of toasted sesame seeds. Quickly toss everything together as if stir-frying, allowing the nutty aroma of the sesame to infuse the lotus root. Adding these at the end preserves their fragrance.
