Ingredients- 1 Tortilla
- 1/2 Onion
- 1/2 Bell Pepper
- 4 Shrimp
- 1 handful Mozzarella Cheese
Seasoning- 4 Tbsp Tomato Sauce

Cooking Instructions
Step 1
This recipe makes 2 servings. First, rinse 8 frozen shrimp under running water to thaw. Once thawed, remove the tails. You can gently peel them if preferred.
Step 2
Lightly grease a pan with oil and sauté 1 minced onion and the 8 shrimp over medium heat until the shrimp turn pink and are cooked through.
Step 3
Once the shrimp are almost cooked, add 1 chopped bell pepper to the pan and stir-fry for about another minute until slightly softened. Don’t overcook the vegetables.
Step 4
Add 8 tablespoons of tomato sauce to the cooked shrimp and vegetable mixture. Stir well to combine everything. Cook for another minute until the sauce is well incorporated. This forms the delicious filling!
Step 5
In a non-stick skillet over medium-low heat, lightly toast the tortilla on both sides without any oil until golden brown and slightly crispy. This enhances the flavor and texture.
Step 6
Spread the prepared shrimp and sauce mixture evenly over one half of the toasted tortilla. Sprinkle a generous handful of mozzarella cheese over the filling.
Step 7
Fold the other half of the tortilla over the filling to create a half-moon shape. Cook on low heat, flipping occasionally, until both sides are golden brown and the cheese is completely melted and gooey. Your delicious quesadilla is ready when the cheese is fully melted!
