Ingredients for 60 Servings

  • Fresh Chives: 500g
  • Thawed Shrimp: 1kg
  • Carrot: 1 whole
  • Onion: 2 medium
  • Fish Sauce (for umami): 50ml
  • Minced Garlic: 100g
  • Pancake Mix (Buchim Garu): 1kg
  • Red Chili Peppers: 5 small

Cooking Instructions

First, thaw the shrimp if frozen and pat them completely dry. Thinly julienne the carrot and onion. Wash the chives thoroughly, remove excess water, and cut them into bite-sized pieces, about 3-4 cm long.

In a large bowl, combine the prepared shrimp, julienned carrots and onions, and chopped chives. Add the finely chopped red chili peppers for color and a hint of spice, along with the minced garlic for aroma and the fish sauce for a savory depth of flavor. Gently mix everything together to season the ingredients.

Now, let’s make the batter. In a separate large bowl, place the pancake mix. Gradually add water, using a ratio of approximately 1 part water to 0.5 parts pancake mix, or about 500ml (2 cups) of water for 1kg of mix. Whisk until you achieve a thick, but pourable batter that will nicely coat the ingredients. (The amount of water may need slight adjustment depending on the brand of pancake mix and humidity.)

Heat a generous amount of cooking oil in a frying pan over medium heat. Spoon portions of the batter into the hot pan and spread them out thinly. Arrange the seasoned shrimp, chives, and vegetables on top of the batter. Cook until golden brown and crispy on both sides. Be sure to adjust the heat as needed to ensure the pancake cooks through without burning.
