Enjoy this easy-to-make seasoned aged kimchi side dish! By washing and seasoning aged kimchi, we reduce its strong sourness, making it wonderfully palatable. It’s a great way to use up older kimchi and create a delicious accompaniment to any meal.
Main Ingredients- Aged Kimchi (Muk-eun Kimchi), 1/4 head (approx. 300g)
Seasoning Ingredients- Gochugaru (Korean chili flakes) 1 Tbsp
- Minced garlic 1/2 Tbsp
- Sugar 1 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
First, gently brush off any excess seasoning or debris from the aged kimchi. Then, rinse it thoroughly under cold running water. If the kimchi is too sour for your liking, you can soak it in cool water for about 10-20 minutes to mellow out the tartness, making it more pleasant to eat.
Step 2
After adjusting the sourness, lightly squeeze out the excess water from the kimchi. Then, chop it into bite-sized pieces, about 2-3 cm in length. Cutting it into smaller pieces helps the seasoning to be distributed evenly and makes it easier to eat.
Step 3
Place the chopped kimchi into a mixing bowl. Gently squeeze out any remaining water by hand; too much moisture can prevent the seasoning from adhering well. Squeezing out just enough liquid is key.
Step 4
Add 1 tablespoon of gochugaru (Korean chili flakes) to the kimchi to give it a vibrant color. You can adjust the amount based on your preference for spiciness and color.

Add 1/2 tablespoon of minced garlic to enhance the pungent aroma. If you enjoy a stronger garlic flavor, feel free to add a little more.

Add 1 tablespoon of sugar to balance the sourness with a touch of sweetness. Adjust the sugar quantity depending on how fermented your kimchi is.

Drizzle in 1 tablespoon of sesame oil to add a rich, nutty flavor and a nice sheen to the kimchi.

Finally, sprinkle a handful of toasted sesame seeds over the top for an extra nutty flavor and texture. Rubbing the sesame seeds between your palms before sprinkling can release even more fragrance.

Now, gently mix everything together with your hands, ensuring the seasoning is evenly distributed throughout the kimchi. Be tender when mixing so you don’t break down the kimchi too much, just coat it well.
