Super Easy Sausage and Vegetable Fried Rice Recipe with Oyster Sauce

Ingredients (Serves 4)
- 200g Vienna sausages
- 60g Carrots (approx. 1/4 medium carrot)
- 140g Zucchini (approx. 1/4 medium zucchini)
- 1 stalk Green onion
- 3 bowls Cooked rice (warm)
- 2 Tbsp Soy sauce
- 1.5 Tbsp Oyster sauce
- 1 tsp Salt
- A drizzle of Sesame oil
- 2 Tbsp Toasted sesame seeds (sesame powder can be used if preferred)
Cooking Instructions
Step 1
First, prepare 200g of Vienna sausages, the star ingredient. Using bite-sized pieces suitable for children will be even better.
Step 2
Slice the Vienna sausages diagonally or into rounds, about 0.5-1cm thick, so they mix well in the fried rice. For a more satisfying chew, you can slice them slightly thicker.
Step 3
Boil some water in a pan and add the sliced sausages. Blanch them for about 2 minutes. This step removes excess grease from the sausages, resulting in a cleaner taste.
Step 4
Prepare 60g of carrots and 140g of zucchini to add color, and 1 green onion stalk for aromatic flavor. Core the zucchini and finely mince the carrots and green onion. Mincing all vegetables to a similar size ensures even cooking.
Step 5
Heat a pan with a swirl of cooking oil. Add the minced green onion and stir-fry over medium heat until fragrant, creating scallion oil. The rich aroma of the scallions forms the base flavor of the fried rice.
Step 6
Once the scallion oil is fragrant, add the prepared zucchini and carrots. Stir-fry over medium heat for about 2-3 minutes. It’s best to leave the vegetables slightly crisp.
Step 7
When the zucchini becomes translucent and slightly tender, add the blanched Vienna sausages and stir-fry together. Cook until the sausages are golden brown for an even tastier result.
Step 8
Now, add 3 bowls of warm cooked rice to the pan. Use a spatula to break up any clumps of rice and stir-fry until all ingredients are well combined. Ensuring the rice is broken up is key to preventing clumps.
Step 9
Add 2 Tbsp of soy sauce and 1.5 Tbsp of oyster sauce to enhance the umami flavor. Stir-fry until the seasoning is evenly distributed. If it tastes bland, add 1 tsp of salt to adjust the seasoning. Taste the rice after mixing thoroughly to ensure even seasoning.
Step 10
Finally, add 2 Tbsp of toasted sesame seeds for a nutty aroma. Rubbing the sesame seeds between your palms to create sesame powder will further enhance the flavor. I added a few black sesame seeds as well for visual appeal.
Step 11
Just before turning off the heat, drizzle a swirl of sesame oil around the edges of the pan. The aroma of sesame oil wafting over the hot fried rice will stimulate your appetite.
