I absolutely love beltfish (galchi)! Even simply grilled and mixed into rice, it’s incredibly delicious. It’s a dish I eat frequently, perfect for a quick and tasty meal.

Ingredients
  • 1 bowl of warm rice
  • 2-3 pieces of beltfish (galchi)
  • 1 Tbsp soy sauce (jin ganjang or mat ganjang)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

Lightly oil a frying pan and heat it over high heat. Then, reduce the heat to medium and grill the beltfish pieces on both sides until golden brown and slightly crispy. Achieving a crispy exterior and moist interior is key.

Step 2

Once the beltfish is nicely grilled, let it cool slightly. Using chopsticks or a fork, carefully remove the bones and flake off the tender flesh. Make sure to meticulously check for any small bones.

Step 3

Now, it’s time to season the rice. When doing so, **please do not use traditional soy sauce (jib ganjang) or soup soy sauce (guk ganjang).** Their intense saltiness can overpower the delicate flavor of the beltfish. Use jin ganjang or mat ganjang (seasoned soy sauce) for a richer, more balanced flavor.

Step 4

Add 1 tablespoon of jin ganjang (or mat ganjang) and fragrant sesame oil to the rice. Mix well to evenly distribute the seasoning. You can adjust the ratio of soy sauce to sesame oil according to your personal taste for an even more delicious experience. (e.g., try a 1:1 ratio to start!)

Spoon the flaked beltfish meat generously over the seasoned rice. Now, grab your spoon and mix everything together – the rice, the beltfish, and the sauce – until well combined. Enjoy this simple yet incredibly satisfying meal!
