Create an adorable Pikachu character bento box right at home! This time, we’ve made it even simpler and more stable by shaping the mashed potatoes into the Pikachu figure. Since we had fresh salmon on hand, we prepared salmon sushi as the main dish and paired it with a cute potato Pikachu for a special meal. Here’s a fun and tasty recipe that both kids and adults will love.
Main Ingredients- 300g fresh salmon fillet
- 2 fresh eggs
- 1 medium potato
- A small bunch of fresh chives
- 2 black olives
- A little sliced ham
- 2 cherry tomatoes
- A little soy sauce
- A pinch of dried basil
- A little cooking oil
Cooking Instructions
Step 1
Finely chop the chives that will be used to tie the sushi. Blanch them briefly in boiling water until softened. This makes the chives pliable and easier to use for tying the sushi rolls.
Step 2
Wash the potato thoroughly, cut it into manageable pieces, and place it in a microwave-safe dish. Cover with plastic wrap and microwave for about 5-7 minutes, or until the potato is completely tender. Carefully remove the hot potato, peel off the skin, and mash it smoothly using a fork or a potato masher. Shape the mashed potato into the body and head of Pikachu.
Step 3
To give the potato Pikachu a more appetizing golden-brown color, lightly grease a heated pan with cooking oil. Gently pan-fry the shaped potato on both sides until lightly golden. This enhances Pikachu’s color and adds a slight crispness to the texture.
Step 4
Crack two fresh eggs into a bowl, whisk them well, and mix in the finely chopped chives. Lightly grease a pan with cooking oil, pour in the egg mixture, and cook thinly and evenly. Once cooked, roll up the egg crepe tightly and slice it into bite-sized pieces to create an egg roll.

Now, let’s create Pikachu’s cute face. Cut the black olives in half to make Pikachu’s eyes. For a unique ‘angry Pikachu’ expression, use olive slices for eyebrows and get creative with sliced ham and the lid of an olive jar for the mouth. The rosy cheeks can be made from thinly sliced cherry tomato tops.
Step 6
Gently thaw the fresh salmon in the refrigerator. Once thawed, carefully slice the salmon into pieces suitable for topping sushi, ensuring a consistent thickness. Avoid slicing too thinly or too thickly for the best texture.
Step 7
Lightly brush the sliced salmon with cooking sake, or if pan-frying, use a low heat and brush with a tiny amount of soy sauce to prevent burning. Finish by sprinkling a pinch of dried basil for added aroma. This step helps to eliminate any fishiness and adds a sophisticated flavor.
Step 8
Prepare the sushi rice while it’s still warm. Season it with the seasoning packet from a store-bought inarizushi kit (a mixture of vinegar, sugar, and salt) to taste. Gently mix the seasoning into the rice with a spatula, being careful not to mash the grains. Lightly dampen your hands with water and shape the rice into individual sushi portions, either round or oval. Avoid packing them too tightly.
Step 9
Arrange the beautifully pan-fried salmon and the savory egg roll on top of the prepared sushi rice. Finally, tie a piece of blanched chive around the sushi to secure it.
