These rolled omelet rice balls are bursting with the rich flavor of egg and are so visually appealing, making them ideal for picnic lunchboxes or for children’s meals. Create a simple yet special meal!
Main Ingredients- 3 fresh eggs
- 1 bowl of warm cooked rice (approx. 200g)
- 1 sheet of roasted seaweed (gim)
- A little cooking oil
- 1 Tbsp toasted black sesame seeds
- 1 tsp salt
- 1/2 tsp sugar
Flavorful Sushi Vinegar Mix- 1 Tbsp granulated sugar
- 2 Tbsp rice vinegar
- 1/2 Tbsp salt
- 1 Tbsp granulated sugar
- 2 Tbsp rice vinegar
- 1/2 Tbsp salt
Cooking Instructions
Step 1
In a bowl, crack 3 fresh eggs. Add 1 tsp of salt and 1/2 tsp of sugar, then whisk well to combine. Removing the chalazae (the stringy white bits) will result in a smoother omelet.
Step 2
Lightly grease a non-stick pan over low heat with cooking oil. Pour a ladleful of the egg mixture and gently spread it to form a thin layer. Cook the rolled omelet, rolling it up as it cooks. Cooking it in thin layers ensures it cooks through evenly.
Step 3
Once the omelet is cooked, carefully roll it up tightly in a bamboo sushi mat and let it rest for a few minutes. This helps it firm up and hold its shape for slicing. Slice the omelet into pieces that match the size of your rice balls.
Step 4
In a bowl of warm rice, add the sushi vinegar ingredients (1 Tbsp sugar, 1/2 Tbsp salt, 2 Tbsp rice vinegar). Gently mix with a rice paddle, ensuring not to mash the grains, until the rice is seasoned evenly.
Step 5
Lightly moisten your hands with water or oil to prevent the rice from sticking. Shape the seasoned rice into bite-sized rectangular onigiri (rice balls). Making them a size that children can easily hold is recommended.
Step 6
Place a slice of the rolled omelet on top of each rectangular rice ball. Wrap a strip of roasted seaweed around the rice and omelet to secure them together.
Step 7
Finally, lightly crush the toasted black sesame seeds (optional but recommended for added flavor and visual appeal) and sprinkle them over the top for a beautiful finish.
