- 1/3 cup water
- 1 tsp vinegar
- Pinch of black pepper
- 0.5 Tbsp glutinous rice flour

- A pinch of sesame seeds
Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. Fresh ingredients are the foundation of a delicious meal.
Step 2
Peel the potato and dice it into bite-sized pieces for easy eating. Finely chop the green onion to add a fragrant aroma to your dish.
Step 3
Remove the heads from the dried shrimp and prepare them cleanly. This completes the ingredient preparation neatly.
Step 4
Heat a pan over medium heat, add 2 Tbsp of cooking oil, and sauté the chopped green onion until fragrant to create green onion oil. Then, add the diced potatoes and stir-fry for about 1-2 minutes until they are lightly coated. Pour in 1/3 cup of water, enough to cover the potatoes.
Step 5
Add the prepared dried shrimp, cover the pan with a lid, reduce the heat to medium-low, and simmer for about 5 minutes until the potatoes are tender.
Step 6
While the potatoes are cooking, prepare the seasoning. Combine 1 Tbsp soy sauce, 0.5 Tbsp oyster sauce, 0.5 Tbsp brown sugar, 1 tsp vinegar for a touch of brightness, and a pinch of black pepper. (Tip: You can increase the soy sauce or use other seasonings instead of oyster sauce if you prefer.)
Step 7
Once the potatoes are cooked, add all the prepared seasonings. Let it simmer for another 2-3 minutes, allowing the potatoes to absorb the delicious flavors. The sauce will reduce slightly.
Step 8
To thicken the sauce, mix 0.5 Tbsp of glutinous rice flour with a little water to create a slurry. Pour it into the pan and stir well to prevent lumps, cooking until the sauce thickens and coats the potatoes beautifully.
Step 9
Once the sauce has thickened and clings to the potatoes, sprinkle in a pinch of sesame seeds for added nutty flavor. Stir gently once more.
Step 10
Just before turning off the heat, drizzle a little sesame oil for a wonderful aroma. Your savory and slightly sweet potato stir-fry is complete!
Step 11
Generously spoon the delicious potato stir-fry over a bowl of warm rice. Garnish with a little of the chopped green onion. Your hearty and visually appealing potato rice bowl is ready to be enjoyed!
