Found a pound of pork shoulder in the freezer and didn’t feel like going to the market. Let’s make a delicious stir-fry using kimchi and vegetables you have on hand. It’s a simple yet satisfying dish perfect for any meal.

Main Ingredients

  • Pork shoulder 1 lb (approx. 600g)
  • Kimchi 1/4 head (well-fermented)
  • 1 Cheongyang chili pepper (adjust to taste)

Seasoning

  • Kimchi jjigae seasoning 1.5 Tbsp (if unavailable, substitute with gochugaru, minced garlic, soy sauce)
  • 2 cloves garlic, minced
  • Pinch of black pepper
  • Pinch of ginger powder (or 1/4 tsp minced ginger)
  • 2 tsp plum extract (or sugar syrup)
  • 1 tsp sesame oil
  • 1 tsp sugar

Cooking Instructions

Step 1

In a large bowl, cut the pork shoulder into bite-sized pieces and add. Sprinkle with minced garlic, black pepper, and ginger powder. Add 1 tablespoon of the kimchi jjigae seasoning.

Add 1 tsp sugar and 2 tsp plum extract. Put on disposable gloves and gently massage the marinade into the meat until well combined. Let it marinate for about 10 minutes for the flavors to meld.

While the pork is marinating, roughly clean the kimchi and chop it into bite-sized pieces. Finely chop the Cheongyang chili pepper. (If your kimchi is very sour, you can add a little extra sugar.)

Heat a lightly oiled pan over medium-high heat. Add the marinated pork and stir-fry until it’s about halfway cooked. Then, add the chopped kimchi and continue to stir-fry together. Once the kimchi is tender and the pork is fully cooked, add the chopped Cheongyang chili pepper and stir-fry for another minute. Finish by drizzling in 1 tsp of sesame oil for extra aroma. Your delicious pork stir-fry is ready!
