Here’s a recipe for delicious pork rib BBQ, perfect for grilling outdoors. The ribs are grilled to a delightful chewy-on-the-outside, juicy-on-the-inside texture, complemented by a savory sauce. Make this pork rib BBQ to enjoy on special days with loved ones.
Main Ingredients- Pork ribs 3.8kg
- Mirin (or cooking wine) 1/2 cup
BBQ Sauce- Store-bought BBQ sauce 10 Tbsp
- Ketchup 4 Tbsp
- Soy sauce 4 Tbsp
- Gochujang (Korean chili paste) 2 Tbsp
- Minced garlic 2 Tbsp
- Honey 2 Tbsp
- Store-bought BBQ sauce 10 Tbsp

Cooking Instructions
Step 1
Meat prices in the U.S. are incredibly affordable compared to Korea. During the Independence Day sale, I found fresh, never-frozen pork ribs (3.8kg) for around $20! It’s such a great deal, I couldn’t resist sharing this recipe with gratitude.
Step 2
To eliminate any gamey odor, carefully trim away the tough membrane and excess fat from between the meat and the bone.
Step 3
Rub the pork ribs thoroughly with mirin. Then, without adding any water, cover the pot and cook on low heat (low-moisture cooking) for 1 hour. This method ensures the ribs become incredibly tender and juicy inside.
Step 4
After an hour of low-moisture cooking, the pork ribs are beautifully tender and moist. They are already delicious at this stage, but we’ll make them even more special with a BBQ sauce.
Step 5
Now, let’s prepare the spicy BBQ sauce to enhance the flavor of the pork ribs. In a pot, combine all the sauce ingredients and bring them to a simmer. (10 Tbsp store-bought BBQ sauce, 4 Tbsp ketchup, 4 Tbsp soy sauce, 2 Tbsp gochujang, 2 Tbsp minced garlic, 2 Tbsp honey. Measurements are using a standard Korean adult tablespoon.)
Step 6
Generously brush the BBQ sauce all over the pork ribs, which have already been tenderized by the low-moisture cooking method. Ensure an even coating using a brush.
Step 7
Place the sauced pork ribs on the BBQ grill. Grill over medium-high heat to achieve a slightly chewy texture on the outside and infuse them with a smoky flavor.
Step 8
Turn the ribs frequently to ensure they grill evenly on all sides.
Step 9
Since the ribs are already cooked, focus on grilling them until the exterior is beautifully browned and slightly charred, without overcooking. Keep an eye on the heat to prevent burning.
Step 10
Oh dear, even though I was careful, one side got a bit too charred! But don’t worry, it’s not too bad and won’t significantly affect the taste.
Step 11
To complement the pork ribs, we’ve prepared a vibrant fruit platter. Halve a watermelon and scoop out the flesh. Then, artfully arrange fruits like pineapple, melon, cherries, and grapes inside. I especially love the ‘Cotton Candy Grapes’ – they are as sweet as their name suggests!
