- 1/3 Carrot (finely minced)

- 1 pinch Salt
- A little Black Pepper
- 2 Eggs
- 1/4 Onion (finely minced)
- 1/3 Carrot (finely minced)
- A little Green Onion (finely chopped)
- 1 pinch Salt
- A little Black Pepper
Cooking Instructions
Step 1
First, prepare one block of tofu. It’s best to slice the tofu thickly, about 1.5 to 2 cm thick. Place the sliced tofu on paper towels and gently press to remove excess moisture from both sides. (Tip: Removing moisture well will prevent the tofu from breaking apart when frying and make it crispier. If it feels like too much work, you can also slice it lengthwise.)
Step 2
Crack two eggs into a bowl. Add a pinch of salt and pepper to your liking. Whisk the eggs thoroughly with a fork or whisk until well combined, breaking the egg whites. (Tip: If you have seasoned salt or pepper at home, feel free to use it for an extra flavor boost.)
Step 3
Add the prepared vegetables to the whisked eggs. Mix in the finely minced onion, carrot, and chopped green onion. Adding vegetables will enhance the texture and appearance, resulting in a more appealing tofu fritter.
Step 4
Place the moisture-drained tofu slices into a resealable plastic bag. Add 2 tablespoons of pancake mix generously. Seal the bag and gently shake it to ensure the mix evenly coats each piece of tofu. (Tip: Using a plastic bag helps distribute the flour evenly without clumping. Shake it up!)
Step 5
Dip the flour-coated tofu into the egg-and-vegetable mixture, ensuring both sides are well coated. (Tip: Instead of coating all the tofu slices at once, dip only the pieces you intend to fry immediately. This prevents the egg wash from drying out or becoming gummy.)
Step 6
Heat a non-stick pan over medium-low heat with a moderate amount of cooking oil. Carefully place the egg-coated tofu slices into the hot pan. Reduce the heat to low to ensure the tofu cooks through evenly without burning.
Step 7
On low heat, let the tofu cook until golden brown on one side, then carefully flip it over. Cook the other side until it’s also a beautiful golden-brown color. Once both sides are nicely browned, your delicious vegetable tofu fritters are ready! Enjoy them while they’re warm.
