In Japan, it’s common to find chicken sold in parts rather than whole. When I get my hands on some affordable chicken drumettes, I love to roast them! Accompanied by plenty of seasonal vegetables and mushrooms, this dish makes a fantastic main course. It’s also a perfect, fuss-free option for a satisfying snack with drinks when you don’t feel like preparing multiple side dishes. The combination of crispy on the outside, juicy on the inside drumettes and flavorful vegetables is always a winner!

Main Ingredients for Oven-Roasted Chicken Drumettes

  • 16 chicken drumettes
  • 1 seasonal vegetable (e.g., eggplant, bell pepper)
  • 1 handful of mushrooms (any kind, e.g., king oyster, shiitake)

Marinade for Chicken Drumettes

  • 3 Tbsp soy sauce
  • 2 Tbsp Korean soup soy sauce (or regular soy sauce)
  • 2 Tbsp sugar
  • 3 Tbsp ketchup
  • 2 Tbsp sake (or mirin)
  • 2 Tbsp minced garlic
  • 1 Tbsp mixed herbs (dried)
  • 1 tsp grated ginger (or ginger juice)
  • 1 tsp black pepper

Optional Ingredient (for extra aroma!)

  • 3 sprigs fresh rosemary

Cooking Instructions

Step 1

Start by washing the chicken drumettes thoroughly. Place them in a resealable bag or airtight container. In a separate bowl, combine all the marinade ingredients: soy sauce, soup soy sauce, sugar, ketchup, sake, minced garlic, mixed herbs, grated ginger, and black pepper. Whisk until well combined. Pour the entire marinade over the drumettes, then gently massage to ensure each piece is evenly coated. Let them marinate for at least 20 minutes in the refrigerator for deeper flavor.

Preheat your oven to 180°C (350°F). While the oven is preheating, line a baking tray with parchment paper. Arrange the marinated drumettes on the tray, making sure they are not overlapping. Scatter your prepared seasonal vegetables (like sliced eggplant and bell peppers) and mushrooms between the drumettes. If you have fresh rosemary sprigs, you can add them now for a lovely aromatic touch as they roast. (Rosemary is optional.)

Place the tray in the preheated oven and bake for a total of 30 minutes. After 15 minutes of baking, check on the vegetables. Some mushrooms can release a lot of moisture or even burn if baked for the full duration. To prevent this, carefully remove just the mushrooms from the tray and set them aside. This allows the chicken drumettes to continue roasting to a perfect golden-brown. Continue baking for the remaining 15 minutes. Once done, your delicious oven-roasted chicken drumettes are ready to enjoy! If you used rosemary, savor the wonderful aroma filling your kitchen during baking.
