Main Ingredients- 1/2 head of well-fermented kimchi (approx. 300g)
- 3 bowls of leftover rice (approx. 450g)
- 2 eggs
- 3 Tbsp cooking oil (approx. 45ml)
Seasonings & Others- 1 Tbsp gochugaru (Korean chili flakes, approx. 10g)
- 2 Tbsp oyster sauce (approx. 30ml)
- 1 Tbsp sesame oil (approx. 15ml)
- 1 tsp toasted sesame seeds (approx. 5g)
- 1 Tbsp gochugaru (Korean chili flakes, approx. 10g)
- 2 Tbsp oyster sauce (approx. 30ml)
- 1 Tbsp sesame oil (approx. 15ml)
- 1 tsp toasted sesame seeds (approx. 5g)
Cooking Instructions
Step 1
First, prepare the kimchi. Take half a head of kimchi and chop it into bite-sized pieces. You don’t need to mince it too finely; about 1cm pieces will give a pleasant texture.
Step 2
In a large bowl, combine the chopped kimchi and 3 bowls of leftover rice. Using cold rice is key for achieving fluffy, non-clumpy fried rice.
Step 3
Add 1 tablespoon of gochugaru (Korean chili flakes) for a vibrant color and a touch of heat. Feel free to adjust the amount to your preference.
Step 4
Next, add 2 tablespoons of oyster sauce. This ingredient is a secret weapon for adding a deep, savory umami flavor that elevates the kimchi fried rice.
Step 5
Gently mix the kimchi, rice, and seasonings together with your hands. Pre-mixing allows the flavors to meld beautifully during cooking and shortens the time you need to spend at the stove.
Step 6
Now, let’s start stir-frying. Heat 3 tablespoons of cooking oil in a large pan or wok over medium-high heat. Crack in the 2 eggs.
Step 7
Scramble the eggs with chopsticks or a spatula until they are softly cooked. Avoid overcooking them; soft scrambled eggs will add a pleasant creaminess to the rice.
Step 8
Pour the pre-mixed kimchi and rice mixture into the pan with the scrambled eggs. Stir everything together and continue to cook, incorporating the eggs into the rice.
Step 9
Stir-fry for about 5 minutes over medium-high heat, ensuring the rice grains are separated and the kimchi is evenly distributed and slightly toasted. Keep stirring to prevent sticking and ensure even cooking.
Step 10
Finally, drizzle in 1 tablespoon of sesame oil and sprinkle with 1 teaspoon of toasted sesame seeds. Give it a quick toss to combine. Your delicious kimchi fried rice is ready to be enjoyed!
