Beef Curry Rice
Tonight, let’s make it special! Enjoy a wonderful homemade delicacy: flavorful curry rice with tender beef and assorted vegetables. It’s a hearty and satisfying meal that the whole family will love.
Main Ingredients- Beef 200g (for curry or stew)
- Carrots 1.5 medium (approx. 150g)
- Onion 1 medium (approx. 200g)
- Zucchini 1/4 medium (approx. 100g)
- Korean Pickling Cucumbers 3 (or 1 Cheongyang chili pepper, adjust spiciness)
- King Oyster Mushrooms 150g (or other mushrooms like Oyster or Shiitake)
- Corn kernels 1 cup (frozen or canned)
Curry Seasoning- Solid Curry Roux 6 blocks (approx. 120g, choose mild or spicy)
- Cooking Oil 1/2 Tbsp

Cooking Instructions
Step 1
First, lightly pat the beef dry with paper towels to remove excess blood. Heat 1/2 tablespoon of cooking oil in a pan over high heat and quickly stir-fry the beef until its surface turns brown. This helps to seal in the juices. Be careful not to overcook, as it can become tough.
Step 2
Once the beef is partially cooked, add the chopped onion and stir-fry over medium-low heat until the onions become translucent and release their sweetness. Well-sautéed onions deepen the flavor of the curry.
Step 3
Add the diced carrots and stir-fry for another 1-2 minutes. Then, pour in 600ml of water (about 3 cups) and cover the pan. Bring to a simmer over medium heat until the carrots are slightly tender. Add the frozen corn kernels at this stage as well.
Step 4
When the carrots are halfway cooked, add the chopped zucchini, Korean cucumbers (you can remove the seeds before chopping), and the prepared king oyster mushrooms. Reduce the heat to low and add the 6 blocks of solid curry roux. Stir well until the curry is completely dissolved into the liquid without any lumps.
Step 5
Once the curry begins to thicken, simmer for a short while longer until the zucchini is tender. Avoid simmering for too long, as the ingredients might become mushy. Serve the well-cooked curry generously over warm rice and enjoy!
