Main Ingredients- 2 or more slices of bread (white or milk bread recommended)
- 3 medium-sized potatoes
- 2 eggs
- 1/8 onion
- 1/4 cucumber
- 1/4 carrot
- 3 slices of deli ham
Dressing Ingredients- 3 Tbsp mayonnaise
- 2 Tbsp oligodang (or honey)
- 1 tsp salt
- A touch of whole grain mustard sauce (optional)
- 3 Tbsp mayonnaise
- 2 Tbsp oligodang (or honey)
- 1 tsp salt
- A touch of whole grain mustard sauce (optional)
Cooking Instructions
Step 1
First, hard-boil 2 eggs. Using a steamer makes this process quicker and easier. Place the eggs in boiling water and cook for about 12-15 minutes.
Step 2
Peel the 3 potatoes and cut them into manageable pieces. Using a microwave can help cook the potatoes more tenderly and faster. After cutting, sprinkle the potatoes with a little water, cover with plastic wrap, and microwave for 7-8 minutes at 1000W. (Alternatively, boil them in a pot with water on the stovetop until tender.)
Step 3
Since the onion will be used raw, it’s important to remove its pungent flavor. Finely mince the onion, then soak it in cold water for about 10 minutes to reduce its sharpness.
Step 4
Finely mince the carrot. Mincing it as small as possible will help it blend well with the other ingredients and ensure a pleasant texture.
Step 5
Dice the cucumber into similar small pieces. Its crisp texture will add a wonderful dimension to the sandwich.
Step 6
Roll up the deli ham slices and then mince them as finely as possible. The savory flavor of the ham will complement the potato salad nicely.
Step 7
Separate the yolks and whites of the hard-boiled eggs. Chop the egg whites into slightly larger pieces to provide a bit of texture. To ensure a smooth consistency, press the egg yolks through a sieve to crumble them evenly.
Step 8
Squeeze out as much liquid as possible from the minced onion and cucumber. This prevents the potato salad from becoming watery. Combine all the chopped ingredients and egg whites in a large bowl.
Step 9
Mash the cooked potatoes until smooth using a fork or a potato masher. Mashing them while they are still warm will make the process easier.
Step 10
Now it’s time to mix everything together. Add 3 Tbsp mayonnaise, 2 Tbsp oligodang (or honey), 1 tsp salt, and a touch of whole grain mustard sauce (if using) to the mashed potatoes. Gently mix all the ingredients until well combined to create your delicious potato salad!
Step 11
This freshly made potato salad is delicious enough to be eaten on its own! It makes a wonderful side dish or snack.
Step 12
Let’s assemble the sandwich! Generously spread the potato salad onto one slice of bread. The potato salad has a nice stickiness that helps it hold its shape well without needing extra wrapping.
Step 13
For a visually appealing sandwich with a beautiful cross-section, don’t be shy with the potato salad filling! You can also add other breads or complementary vegetables to make it even more substantial, according to your preference.
