First, prepare the pork and onions, which are key to the flavor of Jjajangmyeon. Pork with a bit of fat will yield a richer taste, but ground pork works well too. Chop them into bite-sized pieces. Cut the onions into larger chunks to enhance their sweetness and texture. For the sauce, have your soy sauce, black bean paste, sugar, minced ginger, and optional MSG ready.

Heat a generous amount of vegetable oil in a deep pan or wok. Add the pork and stir-fry until it starts to turn golden brown. Once the pork is lightly browned, add the minced ginger and continue to stir-fry until fragrant. The ginger’s pungent aroma helps eliminate any pork odor and adds depth to the flavor.
