Delicious Homemade Jajangmyeon: A Rich Combination of Chicken and Fresh Vegetables

Main Ingredients
  • Chicken (breast or thigh) 100g, finely chopped
  • Cabbage 1 leaf (adjust size as needed)
  • Onion 1/2 medium
  • Carrot a small amount (approx. 1/4 piece)
  • Green onion 1 stalk (white part mainly)
  • Jajangmyeon noodles (fresh or dried) for 2 servings

Seasoning & Sauce
  • Mihyang (or cooking wine) 1 tsp
  • Ginger powder a pinch
  • Black pepper powder a pinch
  • Anchovy extract (or soy sauce) 1 tsp
  • Sesame oil 1 tsp
  • Chili powder 1 tsp (optional, for a spicier taste)

Cooking Instructions

Step 1

First, prepare the chicken. Finely chop the chicken into bite-sized pieces. Using chicken breast will result in a lighter flavor, while chicken thigh will offer a more tender texture.

Step 2

Marinate the chicken. Place the chopped chicken in a bowl. Add 1 tsp Mihyang (or cooking wine), a pinch of ginger powder, and a pinch of black pepper powder. Mix in 1 tsp anchovy extract (or soy sauce) and 1 tsp sesame oil. Gently toss to combine and let it marinate for about 10 minutes. This step allows the flavors to penetrate the chicken, making it more delicious.

Step 3

Prepare the vegetables. Chop the cabbage into large square pieces, and cut the onion into similar sizes. Thinly julienne the carrot. Slice the white part of the green onion diagonally; it adds a wonderful aroma when stir-fried.

Step 4

Now, get ready to cook the noodles. Prepare 2 servings of Jajangmyeon noodles. You can use either fresh or dried noodles.

Step 5

Fill a large pot with plenty of water and bring it to a boil over high heat. Once boiling, add the Jajangmyeon noodles and cook for about 3 minutes, or according to package instructions. Stir occasionally to prevent the noodles from sticking together.

Step 6

While the noodles are cooking, heat 1-2 tablespoons of cooking oil in a separate pan over high heat. Add the marinated chicken and julienned carrots, stir-frying quickly until the chicken is cooked through and the carrots are slightly tender.

Step 7

Remove the stir-fried chicken and carrots from the pan and set them aside on a plate. Now, it’s time to stir-fry the vegetables. In the same pan (or a clean one), add a generous amount of cooking oil. Add the chopped cabbage and onion. Stir-fry over high heat until the cabbage becomes slightly translucent and the onions release a sweet aroma. It’s important to stir-fry quickly to maintain the crispness of the vegetables before they become too soft. Turn off the heat briefly.

Step 8

Drain the cooked noodles and add them to the pan with the stir-fried cabbage and onion. (If you are making the Jajang sauce separately, you would remove the stir-fried vegetables and chicken at this stage).

Step 9

Once the noodles are in the pan, add the reserved marinated chicken and carrots back into the pan.

Step 10

Now it’s time to add the Jajang sauce. Add the Jajang powder or your preferred Jajang sauce. Toss everything together to coat the noodles, vegetables, and chicken evenly. Continue to stir-fry for another 1-2 minutes, allowing the sauce to absorb into the noodles.

Step 11

Finally, add the sliced green onions and mix them in gently. The fresh aroma of the green onions will further enhance the flavor of the Jajangmyeon.

Step 12

Transfer the deliciously prepared homemade Jajangmyeon into serving bowls generously.

Step 13
