Ingredients for a Rich Curry
  • 1 packet of curry powder (adjust amount based on product)
  • 1.5 medium onions
  • 1 large potato
  • 1/3 carrot
  • 150g pork for curry
  • 600ml water
  • 100ml milk
  • A little cooking oil
  • A pinch of black pepper

Pork Marinade
  • 1 tablespoon cooking wine (e.g., mirin)
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare the vegetables that will give your curry its delicious flavor. Wash the onions, potatoes, and carrots, peel them, and then slice them into uniform sticks or bite-sized pieces. Cutting the potatoes into larger chunks helps them retain their shape after cooking.

Step 2

Gently pat the pork dry with a paper towel to remove excess moisture. Then, in a bowl, combine the pork with 1 tablespoon of cooking wine and a pinch of black pepper. Mix well by hand to marinate the pork. The cooking wine helps to tenderize the meat and remove any gamey odors.

Step 3

Now, let’s start sautéing. Heat about 2 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced onions and stir-fry them. The longer you sauté the onions, the sweeter and more flavorful they become.

Step 4

Once the onions start to become translucent, add the cubed potatoes and carrots to the pan. Continue to stir-fry with the onions until the potatoes are slightly tender. Sautéing them at this stage helps to bring out their natural sweetness.

Step 5

Here’s a key tip for achieving a deep, rich curry flavor: caramelize the onions! Sauté them until they turn a beautiful golden brown, almost like caramel. This process unlocks a wonderful sweetness and depth of flavor. Adding a pinch of black pepper at this stage complements the caramelized onions wonderfully.

Step 6

When the onions have reached a lovely caramel color, add the marinated pork to the pan. Stir-fry the pork with the vegetables until it’s browned on the outside and no longer pink.

Step 7

Once all the ingredients are well-sautéed, pour in 600ml of water. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer for about 10 minutes, or until the potatoes and carrots are fork-tender.

Step 8

When the vegetables are almost cooked through, add 1 packet of curry powder. To prevent lumps, it’s best to dissolve the curry powder in a little cold water or gradually whisk it into a ladleful of hot broth before adding it to the pot. Stir well until the curry powder is fully incorporated and the curry begins to thicken. Finally, stir in 100ml of milk and simmer for another minute to finish. Adding milk makes the curry wonderfully creamy and smooth, but feel free to adjust the amount or omit it based on your preference.

Step 9

And there you have it – a delicious, homemade curry! Serve it generously over a bowl of hot steamed rice for a truly comforting and satisfying meal. It’s a fantastic dish that the whole family will love. Enjoy! ^^
